Delicious gluten-free, corn-free (and mostly dairy free) recipes

Make Gluten-free easy! Substitute a gluten-free flour blend for wheat. I love Namaste. If you blend your own, use at least 3 different kinds of flours (no bean flours--taste icky) & include potato starch. Baked goods need xanthan gum—a tsp or so. IMHO Tinkyada brown rice pasta noodles are best. Make recipes cows-milk dairy-free: use coconut, almond or rice milk. I tolerate sheep/goat milk cheese, so sub Pecorino Romano for Parmesan! Cabot aged white Vermont cheddar is LACTOSE FREE & DELICIOUS.
