Instead of cooking for 3-4 hours I use a pressure cooker to cut the time significantly. . 1 beef tongue 1 onion slices 3 garlic cloves 2 jalapeños sliced 1 tsp peppercorns 1 tsp cumin 2 tsp oregano 2 tsp Aleppo pepper or paprika 2 tsp salt 1/2 bunch cilantro Fill with stock or water to cover . Place everything in pressure cooker and cook on high pressure for 1 hour. Remove tongue and peel skin. Place tongue back in liquid and let it cool a bit ( this will help absorb the flavor) serves slices or in a taco with cooking liquid on top. . #ch
