Ingredients: •1 lb salmon (skin removed) •3 large nori sheets •1 C sushi rice •3 T spicy mayo + more for garnish •2 T teriyaki sauce or soy sauce •sesame seeds •scallions or chives, small chop Recipe *preheat oven to 400 1. Cut salmon into small pieces, mix with spicy mayo & teriyaki or soy sauce, set in fridge. 2. Cut nori sheets so you have 12 large rectangles, about 3ish x 3ish inches. You’ll have a couple extra. 3. Use a spoon to press about 2 T of rice onto seaweed, leaving 1/4inch from the the edge of seaweed clear of rice. 4. Place the seaweed with rice on top of muffin tin compartments & use hand or spoon to press down to create cup shape. 5. Add a spoonful of salmon mixture into each compartment on top of seaweed/rice. 6. Bake for 15-20 min. Let cool for about 15 min, so cups shape. 7. Lay 3/4” thick of sushi into a mold (I use shallow Tupperware) and press firmly ensuring it’s flat. Place in the freezer for at least two hours. Once your rice has set, remove it from the mold and cut into bite sized squares. In a non-stick skillet, heat vegetable oil over medium-high heat. Add the cooked sushi rice, spreading it evenly in the pan. Cook for 5-7 minutes or until the bottom is golden brown and crispy. Flip the rice and cook the other side until crispy. In a separate pan, heat a bit of oil over medium heat. Add shrimp and cook until they turn pink and opaque. Place the cooked shrimp on a cutting board and chop into small pieces. In a medium bowl, combine shrimp, chili crisp oil, chopped scallions, panko breadcrumbs, and Kewpie mayo. Place a slice of ripe avocado on top of each crispy rice square followed by a spoonful of the spicy shrimp mixture on top of the avocado. Drizzle eel sauce over the avocado and shrimp.
