Nobody likes a dry brisket, and in order for it to meet the criteria for success in my book, it has to be fall-apart tender. These brisket burnt ends are packed with an intense smoke flavor after cooking over wood for 15 hours. They are caramelized in a sweet, tangy Kansas City-style barbecue sauce.
