Here’s the recipe: Homemade Buttermilk Caramel Syrup 3/4 c buttermilk 1 1/2 c sugar 1 stick butter 1 tsp. baking soda 1 tsp. Vanilla Combine buttermilk, sugar, butter, and baking soda in a large pot. Like one you’d make soup in. Yes you’ll have way more pot than ingredients, but this will boil all over your nearly clean stove if you put it in a smaller sauce pan. Bring ingredients to a boil and reduce heat to low. Cook, stirring very frequently for about 10 minutes. You’re basically making candy so you need to stir consistently. You want to cook until it’s a dark amber color, remove it from the stove and add vanilla. You can can this or place in the fridge for long term storage. They’re great cold but you can also reheat them for a few seconds in the microwave or in a hot airfyer or oven. 310ml lukewarm milk 7g instant yeast 85g melted salted butter 480g bread flour Filling: 200g feta 200g mozzarella grated 1 or 2 tsp Za’atar or oregano Salt & pepper Add the dough ingredients in the bowl in the order listed and mix until well combined, put it on a floured surface and knead for 5min. Cover and rest for 60 - 90 min. If your house is cold you can put it in the oven with the light on. Once risen deflate the dough and cut into 4 equalish parts. You can weigh the dough and divide by 4 too. Roll out each piece to a similar size rectangle and set aside. Place one down add some filling and then the next sheet of dough etc until you get to the top layer. Roll it out by first pressing and patting the rolling pin in the middle towards the outside so the filling doesn’t come out. Use a pizza cut to cut into 8, I normally cut in half then in half and then half again. Slice through the middle to create 16 pieces. Add one on top of the other and stretch slightly then twist and shape into a bagel. (As shown in the reel) Cover and rest for 40 min and preheat the oven to 180C. This is so much better for you than a store-bought bacon and it is better than any other bacon you will taste in your life. Now, if you didn't know, pork belly is what bacon is made out of and I get mine at Costco. This ends up saving me so much money making it myself. I start by mixing together my curing rub. I will have all the measurements in the full recipe listed down below and I'm just rubbing this all over the pork belly. Make sure you coat the entire thing well. Then, you're going to vacuum seal it in some bags, put it in your fridge for days flipping it every single day. You gotta trust the process. After your seven days is up, you're going to pull it out, rinse it underneath the sink, pat it dry, and then put it on a rack. You're going to smoke it at 160 to 170 degrees for around six hours until you get it to 155 degrees internal temperature. Then, pull it off the smoker, put it back into your fridge for a day to let it fully cool and then you are going to set up your meat slicer, slice away, package in vacuum sealed bags in whatever size you want and you just made yourself homemade bacon.

I used 250g pork mince and 150g king prawn. Add to a bowl along with: 3 cloves grated garlic, 1 knob grated ginger, 2tbsp finely minced leek, 2tbsp minced Chinese cabbage, 2 minced spring onions, 2tbsp chopped chives, 1tsp light soy, 2tbsp shaoxing wine, 1tbsp oyster sauce, 1tbsp sesame oil, 1tsp each white pepper, salt, sugar and MSG 2. Mix to combine thoroughly, then pick up and throw mixture into the bowl a few times to build up the texture 3. Add 1tsp of the filling to the centre of a wonton wrapper, then wet two edges and close to form a triangle. Wet the two corners and fold together, pressing to seal. Set aside in a cool place 4. Crispy chilli oil: finely slice one shallot and 10 cloves garlic 5. Add 500ml neutral oil to a pot and add in the shallots. Fry till golden and crisp, then remove. Add garlic to the same oil and repeat. Add blanched peanuts to the same oil and repeat - set all crunchy bits aside 6. In the same oil, add in 1 knob ginger, 3 cloves garlic, 2 star anise, 1 cinnamon stick, 1tbsp corriander seed, 2 bay leaves - leave to infuse on med heat ~15 mins then strain and remove aromatics 7. To a metal bowl, add 2tbsp gochugaru, 1tsp sichuan peppercorn powder, 1tsp chilli flake, 1tbsp sugar, 1tsp sea salt, 1tsp MSG - mix with 1tbsp black vinegar 8. Heat infused oil to 375f, then carefully add ladle by ladle to seasonings and stir. Keep adding till desired consistency, then add in all your crunch. Store in a jar and use for everything!! 9. Add your wontons to simmering water and cook for 4-5 mins 10. Add some chilli crisp to a bowl, along with black vinegar and your wontons straight from the water. Top with more chilli oil, black and white sesame seeds + spring onion - This one’s fire. The chilli crisp is unreal, I could literally put it on everything! Mouth-numbing flavour but with some sweetness to balance.
