This is a traditional Mexican plate. They're called chile rellenos because they're stuffed. Okay we're going to start off by grilling our chiles. Ready. So now it's just going to go in a plastic bag and then we seal it up. We're going to leave them in here for about 10 minutes. We're going to start working on our salsa. Six roma tomatoes, the jalapeño, and the serrano. Two garlic cloves, chicken bouillon, quarter of an onion. Add some water. It's been 10 minutes with the chiles in the bag and now it's time to start cleaning them and after this, what I do is I'll cut off this part right here. I'll use a spoon and then I'll just throw out the seeds. I'm going to cut the cheese and grab chile by chile and we add two slices. Sprinkle the chiles with some flour on both sides because this is how we're going to make sure that the egg sticks to the chile. We're going to start off by separating the egg whites and the yolk. It's one egg per chile and don't get rid of the egg yolks. Start beating the eggs. This is how the egg should look guys. This is just the egg white. Remember, we're going to add salt and the egg yolks. You're going to beat it again and that's how it should look. Pan with oil. I set it to medium heat. See if the oil is ready. I'll put a little bit of egg. Now, what I'm going to do is I'm going to grab each chile, dip it into the egg batter and we're going to do the exact same thing for the rest of the chiles. And now we transfer it into the plate and this is how our chiles should look. Nice and fluffy. We are done frying the chiles and now we're going to set them to the side because we're going to prepare the salsa. So this is the last part for the chiles. We add a tablespoon of oil and add the salsa. Cuz we need to simmer it. This is where you can try the salsa to see if you need more more salt. The salsa is ready. Yastalista la salsa. Time to throw in our chiles. We'll just let it boil for about a minute or two. They smell delicious. Tortillas, perfect.

Today, I'm going to be making chile relleno casserole. It's super delicious. Cheers. For this recipe, I'm going to start off by roasting six poblano peppers. Once they're fully roasted, I'm going to put them in a bag to sweat and I like using a spoon because it's much easier to peel. Now, we cut them open and remove the seeds. Once we're done with the peppers, we're going to start grating the cheese and I'm using 20 ounces of Oaxaca cheese or you can use the melting cheese of your choice. To make the egg batter, I'm going to be using six eggs and I'm going to separate the yolks from the egg whites and make sure your eggs are at room temperature. We're going to beat at high speed until fluffy. It's ready and this is how they should look. For me it took about a minute and a half. Now we add the egg yolks, half a teaspoon of baking powder, 1/ 3 cup of all-purpose flour, one fourth cup of milk, and last, salt and pepper to taste. Now we continue mixing at medium speed. Next I'm going to grease my tray. Now we add a layer of the egg mixture and spread it evenly. We lay three a poblano peppers on top. We add a layer of cheese. Next we add the other three peppers, more cheese, the rest of the egg mixture, and last we top it off with more cheese. Now we bake in the oven at 350 degrees for 30 minutes. And while we wait, I'm going to start making the salsa. And for that I'm going to roast five roma tomatoes, quarter of a white onion, one jalapeno pepper, and two garlic cloves. It's been 30 minutes. The casserole is now ready and I'm going to take it out. Veggies are ready. I'm going to remove them from the heat and now in some oil, fry one tortilla until crispy golden. We add it to the blender along with the veggies. And I've already removed the skin from the tomatoes and the jalapeno. Here I have two teaspoons of chicken bouillon and half a teaspoon of oregano. And last one third cup of water. Now we blend. In the same oil we use to fry the tortilla. We're going to now fry our salsa. Mix. This is a perfect time to check for salt. We reduce the heat to the lowest setting and let it simmer for about 2 minutes. The salsa is now ready and I'm going to serve myself. It looks so cheesy, so delicious. Alright guys, now for the moment of truth. Cheers. And there you have it. Delicious Chile Rellenos casserole.
