Chapter One: Introduction
When you think of a turkey, do you imagine a big, double-breasted bird covered head to toe in vibrant feathers? This is the standard image of an industry-bred turkey, but it is a far cry from what natural, heritage turkeys look like. In 1784, Benjamin Franklin actually suggested that the turkey become the national bird of the United States. If Franklin could have seen the way the food industry has changed his beloved bird into a genetically-modified food product, he might have changed his mind.
Heritage turkeys are not only a popular food source and alternative to genetically-modified poultry, but they are also becoming more popular as pets. These rare birds were once near extinction, with only about 1,300 accounted for in the United States in 1997. Just nine years later, in 2006, a turkey census revealed that the population had soared to nearly 9,000. This number continues to grow as more and more people realize the value of these animals as pets.
In this book you will learn everything there is to know about heritage turkeys. Banding – a form of identification, putting a tag or band on the wing or leg of a bird
Beak – the protruding mouth part of a bird, typically divided into an upper and lower part
Bedding – the material scattered on the floor of a pen or enclosure to absorb moisture
Brood – to care for a batch of chicks
Chick – a baby bird
Clutch – a group of eggs laid at one time by a single female
Coop – a cage or enclosure in which birds are housed
