The Mediterranean Diet 🍝 on Instagram: "This One Pan Roasted Veggies recipe is both nutritious and delicious! Perfect as a flavorful side dish for any protein. Ingredients: Gold or red potatoes, skin on + quartered Carrots, chopped Red bell pepper, chopped Squash, chopped Zucchini, chopped 1 red onion, quartered 4 cloves garlic, roughly chopped Avocado oil Salt Black pepper Paprika Cumin For garnish: 1 lemon Parmesan cheese, shredded Fresh parsley Directions: Preheat oven to 400°F (200°C). Toss all the chopped veggies and garlic with avocado oil, salt, pepper, paprika, and cumin. Spread them evenly on a baking sheet and roast for 25-30 minutes, or until tender and golden. Once done, squeeze fresh lemon juice over the veggies, sprinkle with Parmesan cheese, and garnish with fresh parsley.
