One of of my best pasta recipes in my opinion, so so easy and utterly delicious. 🍝 For 2 people: 200g spaghetti 100g pancetta 2 leeks, trimmed, washed & sliced into rounds 1 tsp thyme 2 eggs, 1 yolk only, 1 whole 60g Parmesan, grated 1 tsp black pepper 10 sage leaves 1. Heat a couple tsp of olive oil in a deep frying pan and add the pancetta, cook until golden and crispy. Add the leeks, thyme and 100ml water then cover and cook for 45 mins, stirring occasionally until caramelised 2. Bring a pot of salty water to a boil, add the spaghetti, and cook until al dente. Reserve a mug of pasta water before draining. 3. In a separate pan, crisp the sage leaves in a little oil for about 1 minute 4. In a bowl,

Genuinely one of my fav pasta dishes to date, the creaminess cuts through the salty olives and tomatoes SO well and just makes this such a divine recipe. 🍝🍝 For 2: 200g pasta 3 sausages, skins removed and torn in pieces ½ red onion, finely chopped 3 garlic cloves, finely chopped ½ chilli, finely chopped 1 tbsp tomato paste 15 mixed olives or just kalamata, roughly chopped Handful parsley, finely chopped 3 tbsp double cream Parmesan to serve 1. Bring a pan of salty water to a boil and cook your pasta according to instructions, around 10-11 mins. 2.
