Stanley Tucci's Green Lasagna
Actor and cookbook author Stanley Tucci recalls that when his family stayed in Italy, they found themselves in Bologna—the only city, it seemed, where there was an orthodontist who could replace his sister’s braces. During this day trip they ate lunch at a restaurant that specialized in lasagne verde. To this day, Tucci says it remains one of the finest meals he has ever eaten.
Stanley Tucci's Poached Pears in Red Wine with Muscat Zabaglione
This simple dessert recipe was a childhood favorite of chef Gianni Scappin, who co-authored the Tucci Cookbook with actor and Italian food enthusiast Stanley Tucci. The chef says that that as a child, his aunt Angela found that making this warm, colorful dish was just the trick to keep him and his siblings occupied, especially on dark winter evenings while their parents were working at the family’s trattoria.
Stanley Tucci's Stuffed Beef Rolls
There are many variations on this basic recipe for beef braciole, says actor and cookbook author Stanley Tucci, and it seems that every southern Italian family has its own version. Tucci explains that his mother prefers to stuff several pieces of fillet steak pounded to 1/8-inch (3-mm) thickness, fry them and then add them to a simple tomato-based sauce. The tomato sauce is served over pasta as a first course, and the meat is sliced and served as a second course, followed by salad.
Stanley Tucci's Roasted Potatoes with Rosemary
Actor and Italian food enthusiast Stanley Tucci says his maternal grandfather, Nonno Tropiano, stored the potatoes he grew over the summer in the cold, dry cellar of his house along with the salami he was curing and the wine he was aging. This simple recipe for roasting potatoes with rosemary is very flavorful and has been popular with everyone Tucci has served it to. Enjoy as a side dish with meat, fish or chicken.

Stanley Tucci's Caponata
Actor and Italian food enthusiast Stanley Tucci says that caponata should taste agro dolce, which means slightly sweet and slightly sour. This simple vegetable dish makes a delicious accompaniment to grilled meat or fish. Caponata may be prepared up to one week in advance. Cover and store in the fridge, then return it to room temperature or reheat before serving.
Stanley Tucci's Broccoli Rabe Tropiano Style
Actor and cookbook author Stanley Tucci learned this easy recipe for broccoli rabe from home cooks on his mother's side of the family. Before draining vegetables or pasta, Tucci likes to reserve some of the cooking water, as he does here. He uses this flavorful water in place of water from the tap to achieve the right consistency in a finished dish. If you refrigerate or freeze cooked broccoli rabe, store it in an airtight container filled with cooking water.
Stanley Tucci's Arugula with Prosciutto, Pears and Parmesan
This simple dessert recipe was a childhood favorite of chef Gianni Scappin, who co-authored the Tucci Cookbook with actor and Italian food enthusiast Stanley Tucci. The chef says that that as a child, his aunt Angela found that making this warm, colorful dish was just the trick to keep him and his siblings occupied, especially on dark winter evenings while their parents were working at the family’s trattoria.

Stanley Tucci Chicken Cacciatore
“Each Italian family seems to have its own variation on this classic dish,” says Stanley Tucci, actor, cookbook author and host of the series Searching for Italy. This version hails from his mother’s side of the family, and it includes tomatoes—an ingredient that cooks on his father’s side of the family typically omitted from their chicken cacciatore. Stanley recommends serving this hearty one-pan meal with a medium-bodied white or a light red.
