Lately, there has been a greater demand in the supply of reliable foodstuffs, with higher health
standards, together with the absence of post-harvest residues for the safeguard of consumers
health.
Ozone treatments can be useful in some of the foodstuffs processing or storage phases.
The ozone molecule, highly unstable, during the deterioration phase produces bi-atomic oxygen
and an extremely reactive radical oxygen atom, which is able to destroy even resistant and less
biodegradable organic molecules .
Ozone is produced by special ozone generators, which work on the following principle:a high
power difference is applied to two concentric tubular elements (one is the earth electrode, the
other high voltage), between which is positioned a dielectric, pure oxygen flows through the
gap between the dielectric and earth electrode and is invested by an electrical discharge. The
so-called crown effect is created . In these conditions the oxygen molecules are activated and
converted to ozone molecules depending on a fine balance between the pressure, temperature
and tension applied. The heat produced during this process is normally discharged by using
water as refrigerant. The ozone generator consists in a control panel and a vessel containing a
certain number of single, ozone-producing elements (previously described), the number of ele-
ments depends upon the quantity of ozone required. The ozone accumulated in the storage and
gasification tanks passes into the ozone generator reactor where the ozone flow is produced and
is then sent out for use.

Advantages:
Doesnt cause secondary pollution, ozone in fact, after reaction , deteriorates to become
molecular oxygen and leaves no residues.

consequent foul odours even in the case of long term residues.
