INTRODUCTION:
HRP is the most important part of café’s management. It helps in getting right people at the right
time in the right place for the right cost. It also helps in identifying organization needs and
strategies that will help the organization to achieve their goals. Below are the basic models of
HRP for the café.

1. ANALYZING/ STOCKTAKING:
It is the process to analyse the external and internal environment factors and organisation
direction.

The basic need of stocktaking is to analyse how many people are needed at every level of
organisation in order to achieve corporate objectives. And what kind of skills, abilities and
knowledge required. For the stores we need different types of staff. These includes:
- A Store Manager:
Store manager is responsible for the day to day operations. He needs to deliver sales goals every
year and ensure it that all the team is providing exceptional customer services. The core
responsibility is to maximise productivity, profitability and sales of café. It also helps in
recruiting best talent for the café. Motivate team and train them to get better results. Store
manager must have strong communication skills and organisational and delegations skills too.
He must have to spend most of the time on the selling floor. He must possess multi tasking skills
and must have atleast three years of management experience in relevant hospitality or food
industry.
- An Assistant Manager
Assistant manager should have strong conflict resolution and interpersonal skills. Must be
flexible enough to work day or night or on weekends as needed. Must be able to stand and move
physically for long hours. Must be able to participate in daily back/front operations of fast paced
environment. Must be able to move, lift, balance or bend multiple objects (weighing up to 30lbs)
during working hours. Must be a quick learner and knows how to achieved maximum sale. Must
have 2 years of management experience in the relevant industry.
- A Head Waiter
The ideal Head waiter must have past experience in a same role and within a face pace working
environment. Must have exceptional standards of services. Ensure that all policies for safety and
security are properly implemented. Must have strong interpersonal and communication, must be
able to communicate in a professional way. Must maintain the confidentiality of information of
proprietary and must protect assets of the company. Take proper actions if there is some mishap
or mishandling happened. Train the staff properly. Must ensure that customers’ needs are meet
and all the staff is working as a team.
- A Head Chef
The head chef is sole responsible for the overall operations for kitchen and back-of-house. Helps
in execution and implementation of policies and procedures. Helps in hiring of staffs, training
and purchasing of inventories. Manages daily culinary operations. Cultivate positive work
relationship with team members, vendors and all management levels.
- Kitchen Staff (6 Employees)
They assist head chef in the overall operations for kitchen and back-of-house. Helps in execution
and implementation of policies and procedures. Helps in hiring of staffs, training and purchasing
of inventories. Manages daily culinary operations. Cultivate positive work relationship with team
members, vendors and all management levels.
- Waiting Staff (10 Employees)
Deliver meals and drinks to tables. Take proper order from customers. If customer need any
guide in the menu or in ordering process then you must provide proper guideline to customers.
Clear tables and keep the place tidy and clean. You’ll be train to prepare beverages and serve it
to customers

- Deli Staff (4 Employees)


They must provide excellent customer service Maintain cleanliness all the time. Work as a team
player and able to attain the goals of the organization. Must meet the expectations of predictable
regular attendance. He must know how to make different types of recipes. Must have the
knowledge about the food so that he will answer the customers correctly.

- Store Staff (4 Employees)


They are responsible for the stock keeping. They managed the inventory records and keep all the
work up to date. They must be honest and willing to work as a team. Report directly to the
manager in case of any damage in the inventory. Must meet the expectations of regular
attendance. Must be flexible to work in different shifts
- Cleaners (2 Employees)
The job of the cleaner is not easy. He is responsible for proper handling of cleaning and chemical
products. He makes sure that the store is clean all the time. Also other greasy objects like grill of
the ovens must be clean properly by him. He must get the training about hygiene and handling of
chemicals etc.
2. FORECASTING:
It is the process of identifying the demand and the supply of the employees either outside of the
organisation and/or within organisation. It involves two steps: demand forecasting and supply
forecasting.
- Demand forecasting: it’s the complete process for estimating the quality and the quantity
of people that are required to meet the future goals and needs of the organisation. For the
café we don’t need to forecast demand as we know the number of employees needed to
open the new café. If this number of employees (demand forecasting) is not going to be
mentioned then we can follow different techniques to forecast demand. These techniques
includes managerial judgement, ratio-trend analysis, work study technique etc.
- Supply forecasting:
In supply forecasting we are basically involves in identifying the quantity of people that are
available either within organisation or outside of the organisation to meet the demand. In
opening up a new store, we can use the staff of our existing stores. We do have our employees
who are running three stores successfully already. So in next step we will plan that how will we
do that.
3. PLAN:
The next step is to plan that how we will hire and relocate our staff and fulfilled the staffing
needs. Like the best store manager, head chef and head waiter of the best store can be relocate to
the new store so that they will due to their experience and skills can work efficiently and
effectively. Whereas the assistant manager of the store get promoted to store manager position of
the existing store so that he will be satisfied and work more deliberately. While we can also
check whether any waiting staff’s member and kitchen staff’s members is now capable enough to
be promoted to the head chef and head waiter position in existing store (because the head chef
and head waiter is already relocated to the new store). If there is no one who is capable enough to

get to be promoted on such a high rank so we will starts recruitment procedure for the hiring of
head chef, head waiter and assistant managers post. Also from every store we can get best
waiting staff and deli staff and kitchen staff for our new store. New hiring procedure should be
started for all of the stores either existing or new. Because hiring is the continuous process and
by hiring process we can get the possible fit for the store.
4. IMPLEMENTATION:
Proper implementation should be done. Proper training should be provided to the existing and
new hiring. Interviews should be done of all levels of employees for future hiring. Every step
should be evaluated properly and if still we are fail to run our new store then it means there is
some lacking in our HR planning so therefore we will starts the HRP procedure again

ORIGINS

This model was proposed by John Atkinson in 1984. He suggested that the structures of the
organization requires increase in plasticity in market which is fluctuating and in the competitive
and unpredictable business environment. He believes that flexible staffing arrangements will be
the answer of this volatility. This model suggests that we can meet our business needs
proactively through flexible arrangements of staffing.

INTRODUCTION

Two Groups:

This model divides organization into two groups distinctively.

1. The core group:


It consists of full time primary workers and internal workers. They are difficult to replace and
functionally flexible due to their knowledge, high level skills and skills.

2. The Peripheral group:


They are less skilled and less experienced. They are easily available in the labor market. They
can be easily sourced anytime for any heavy task period. They are also divided into two sub
groups: the first peripheral group consists of low skilled, part time and flexible workers and
second peripheral group consists of large volume of subcontractors, agency staff and
outsourcing. These individuals operates catering and cleaning. They are not the direct employees
of the organization but they are important part because of its functioning.

Three Flexibilities

In addition to the two groups, Atkinson also highlights three different types of flexibility. These
are:

- Functional Flexibility:
It refers to the high level of skills that are needed in performing different tasks, as presented by
the core group of workers. It allows management to reposition core workers between multiple
tasks and work forces. Functional flexibility requires more flexible working hours, training
programs and reevaluation of value/ payment to the company.

- Numerical Flexibility:
It refers to the volume of the low skilled workers available in the market. It is applied on
peripheral workforce. It means that the employers can match the demand of labor with the
number of employees at the company who are under contract. This can be attained through
flexible methods of employment such as outsourcing, temporary workers, short-term contracts
and other means.

- Financial Flexibility:
It refers to the organization’s capability to adjust the pay (price) of labour in accordance with the
demand and supply of company’s workers. Financial flexibility also refers to the compensation
that is granted to the individuals at the time of the termination of their contracts. Hence, it is
supportive of and related to functional and numerical flexibility.

Two Dimensions

Atkinson also highlights two dimension in which we can apply flexibility:

- Flexibility in Employment:
It refers to the concept of labor market. In 1960’s employers found new and innovative ways to
make the composition and size of their workforce more flexible. These includes zero hours and
part time contracts, remote workers, sub-contracting and many more.

- Flexibility in Work:
It refers as the flexibility within the organization. It is useful in the discussions of work structures
such as flexible working times and group work and also it can be used for the implementation of
new technologies which allows more flexible process of production. These work structures and
technologies allow employees to quickly respond to the changes in the market within changing
their workforce’s composition.

New stores requires following number of employees:

- A store manager:
We will put the store manager in core group. Because the functional flexibility of store manager
is higher. Store manager is the core of the store and is responsible for the success or failure of the
store.
- An assistant manager:
Assistant manager is also the part of core group because the kills and the expertise are higher. He
with the help of store manager can run the store smoothly and can provide proper training to the
team.
- A head waiter:
He is also the part of core group because his experience and knowledge about customer handing
is much higher than anyone in the store. He knows what the customer needs is and how to satisfy
it.
- A head chef:
He is also the part of core group. As he is the king of the kitchen and he knows what exactly
customers wants to eat. His expertise can be used to train the kitchen staff. He can unite the staff
and work as a team to achieve customer satisfaction.
- Kitchen staff (6 members)
They are less skilled and less experienced i.e. may be fresh or students who wants to be a chef.
So we put them in first peripheral group. They are easily available in labor market

- waiting staff (10 members)


They are the part of first peripheral group. As they are low in skills and flexible workers. They
can work in flexible working hour i.e. on weekends or on different shifts. They are available in
the labor market easily. They can also be the part of second peripheral because we can outsource
them or hire the waiting staff from the agencies.
- Deli staff (4 members)
They are contract based employees. They don’t needs high amount of qualifications and they are
low skilled employees. They are the part of second peripheral group. But their skills may be
furnished and can be move to first peripheral.
- Store staff (4 member)
They are low in skills, knowledge and expertise. They may be undergraduate students who wants
to finance their studies or may be someone who wants to some part time job. They are the part of
second peripheral group. Their working hours are fixed. They are also contract based employees.
- Cleaners (2 cleaners)
They are the part of second peripheral. They ae not the direct employees but they are hired to
perform specific tasks. They are easily available in the market.

Psychometric testing

A range of attributes are best tested through psychometric testing. This term is often confusing, but in

The term 'ability tests' is used broadly and in this context will encompass aptitude tests too. Ability tests

Presentations

Presentations are frequently used as a selection tool, particularly in senior jobs. The applicant is
provided with a topic and given a time-frame to deliver a presentation on that topic. In some
organisations the presentation topic is sent with the interview confirmation. It is now often given to
applicants on the day of the interview and the applicant has a set period to prepare the presentation
before the interview.
