This project is outcome of passionate OPOS Labsters. And with all drooling posts with many
approaches, we had gala time during the weekend with Labsters to crack & consolidate the
recipe for Modhakams. And here we are with easy peasy recipe & promise this can be made by
anyone with the same outcome!
Thank you so much to passionate OPOSers MS, UV, KS, RR & all Labsters, they all made it
possible by handholding me on every step to make Modhakams. Thanks to OPOS rock stars
PSR, SPM & RR for the spark.
Here is the consolidated learnings so we can gamuk Lord Ganesha with his fav:
Step 1: Aatalysis Rice flour dough:
Layer 1: 1.5 water
Layer 2: 1 tsp sesame oil
Layer 3: 1/4 tsp salt
Any heat settings, 1 whistle. Mix it with 1C Rice/Idiappam flour to sand consistency. Rest it for
minimum 15 mins, with closed lid & weight. (No roasting required for the flour). Knead them
briefly & start rolling in equal sized balls so it can hold stuff!!
Step 2. Poornam paste:
Layer 1: 1 tbsp water (aka 3 tsp water)
Layer 2: 1C coconut flakes
Layer 3: 1C jaggery powder
Layer 4: 2 tsp ghee
Layer 5: 1/4 tsp cardamom powder
Layer 6: Sprinkle 1 tsp water
Any heat settings, 3 to 5 whistles (I went till 5) depending on your choice for caramelization.
Release pressure & fluffup the mixture to settle
Step 3: Modhakams/Kozhukattai
Layer 1: Make equal sized balls from Step 1
Layer 2: Make equal quantities of Poornam from Step 2 (We used 1 tpsp spoon).
And process Step 3:
1: Flatten the flour paste with balls from Step 1
2: Stuff with Poornam paste from Step 2
3: Apply design of your choice & seal it. Continue to finish the dough with poornam/other
stuffings (including cheese/lentils/even peanut butter etc... Sky is the limit)
Steam them all for 1 whistle. Release pressure manually, let it settle. Give a gammuk to lord
Ganesha & Ammuk them as well.
