Pickled Green Papaya (Papaya Atchara)

I. Objectives:

1. Learn to make a Pickled Green Papaya.


2. To apply the concept of Fermentation
3. To know the Health Benefits of Pickled Green Papaya

II. Materials

Ingredients: (Depends on how much you want to make)

 2 pieces Green Papaya


 1 piece medium-sized Eggplant
 1 piece medium-sized Bitter Gourd
 1 piece large-sized Carrot
 9 pieces String Beans
 4-5 pieces Sili
 Salt
 Sugar
 Vinegar

Materials and Equipments:

 Bowls
 Chopping Board
 Knife
 Casserole
 Strainer
 Stove
 sterilized glass jars with caps
 Stove
III. Procedure

Directions:
1. Peel the Green Papaya and grate it using a cheese grater.
2. Peel then chop the following vegetable into thinly sliced pieces about 2
inches in length.
3. Combine the grated papaya and salt in a bowl and knead them together
for a few times and discard the juice. Put it aside.
4. Boil water then put the vegetables one by one for about 2 mins. to let it
cook.
5. In another casserole, mix vinegar, salt and sugar to make the sauce.
Adjust the taste, the sweetness and sourness must combine well to
balance the flavor.
6. Add the cooked vegetables together with the sauce then mix together.
(Add salt or sugar if the taste not balanced.)
7. Put it in a bowl and let it cool then put it in clean jars.
8. Serve. (Approximately makes 3 large jars)
