Lipozyme TL 100 L
Description
Lipozyme TL 100 L is a food-grade liquid preparation of a microbial lipase (EC
3.1.1.3) from Thermomyces lanuginosus produced by submerged fermentation
of a genetically modified Aspergillus oryzae microorganism.
Product Properties
Activity
One KLU (Kilo Lipase Unit) is the amount of enzyme which liberates 1 mmol per
minute of titratable butyric acid from tributyrin under a set of standard
conditions. See the Analytical Method for further information.
Food-grade status
The product complies with the recommended purity specifications for food-
grade enzymes given by the Joint FAO/WHO Expert Committee on Food
Additives (JECFA) and the Food Chemicals Codex (FCC).

Application
Lipozyme TL 100 L is intended for fat hydrolysis, modification of triglycerides
and production of mono- and diglycerides.
Reaction Parameters
Lipozyme TL 100 L is most active in the temperature range of 20-50°C (68-
122°F) and at a pH in the range of 6-11. For initial fat hydrolysis trials dosages
between 2 and 5 KLU/g fat, contact times in the range of 1-5 hours and a
temperature around 50°C (122°F) are recommended.
As shown in Figures 1 and 2 Lipozyme TL 100 L is active over broad ranges of
pH and temperature. The stability of Lipozyme Tl 100 L is illustrated in Figure 3.
It should be emphasized that the above-mentioned curves refer to the specific
conditions used in the tests. For other substrates and conditions deviations
from these curves can be expected.

Safety
Enzymes are proteins and inhalation of dust or aerosols may induce
sensitization and may cause allergic reactions in sensitized individuals. Some
enzymes may irritate the skin, eyes and mucous membranes upon prolonged
contact.
The product may create easily inhaled aerosols if splashed or vigorously stirred.
Spilled product may dry out and create dust.
Spilled material should be flushed away with water (avoid splashing). Left-over
material may dry out and create dust.

Storage
Enzymes gradually lose activity over time depending on storage temperature.
Cool conditions are recommended. When stored below 2°C (36°F) the product
will maintain its declared activity for at least 3 months. Extended storage and/or
adverse conditions incuding higher temperatures, may lead to a higher dosage
requirement.
