    Restaurant case study

    OBJECTIVE:
    The objective is to get students aware of the anthropometry and ergonomics of a
    restaurant.

    LEARNING OBJECTIVE:
    To familiarize students with the details and specifics that go into designing a
    restaurant and how to study and analyze existing spaces w.r.t. the design details and
    anthropometry and ergonomics.

    PROCESS:
    Restaurants can be categorized into :
    1. Fine dining
    2. Casual Dining
    3. Fast Casual
    4. Ghost restaurant
    5. Family style
    6. Fast food
    7. Food truck cart or stand
    8. Café
    9. Buffet style
    10. Pub
    11. Cafeteria
    12. Coffee house
    13. Diner
    14. Pop up restaurant
    15. Contemporary casual
    16. Bistro
    17. Destination restaurant
    • Students pair up in groups of three and each group has to pick a restaurant
    (either of the above) for an on-site in depth case study.
    • On the basis of the items selected, an in-depth anthropometric research
    needs to be carried out
    • A measured plan of the existing restaurant needs to be worked out
    • Analyze the restaurant w.r.t. the zones (sales/ service counter, preparation/
    back counter, displays, dining and seating areas, menu/ signage display, rest
    rooms and any other zones applicable), lighting, materials, proximity of
    spaces, circulation, frequency of visitors, electrical details and services
    • Branching out the activities related to the zones
    • Furniture dimensions need to be studied (plan, elevation, materials and any
    other specifications)
    • Student observations w.r.t. the above mentioned points and efficiency
    analysis is must
    • Students can refer to the presentation and standards data for checking the
    efficiency of the anthropometry and ergonomic details

    EXPECTED OUTCOME:

    The above process needs to be followed, based on which a pdf with thorough case
    study research needs to be submitted
