Himachali cuisine is one such wholesome platter that would take you back to the early 19th century. Food is
one mediator that unites people across cultures. People celebrate the togetherness by sharing their feast with
something sweet and sour. This is by serving a popular dish Malpua with kaddu ki chatni. Since it is warm and
good for digestion it is consulted like a starter.
Pumpkins, capsicum, peas and apples are wildly cultivated in large quantities all over Himachal. But the one
prize gourmet which is only found in Himachal Pradesh is wild mushroom called Gucchi. Gucchi is one such
ingredient that will make you sweat even in minus temperature. Though it has no taste, it Is famous for its
nutritional and medicinal value. It is a warm food and used in soups. Locals consume it as a vegetable by frying
it in ghee with turmeric and cumin.
Yogurt is one of the most commonly found food products in every household and is used for almost everything.
One such dish is Khoru, a delightful refreshing soup made of curd and vegetables. The sumptuous Chane ka
Madra is a dish that consists of soaked chickpeas cooked well in oil with cloves, cinnamon, cardamons, cumin,
coriander powder, turmeric powder and tamarind. This dish can be had with a rice. The other dishes include
kaddu ki khatti sabzi, rajma dal, lingdu ki sabzi. Siddu is another popular dish which is quite common. It is a
type of fermented bread stuffed with khameer which has good bacteria and made from ghee. In desserts this
cuisine known for gudh ki kheer made from brown rice and palak ka halwa.
