Natural Pigment
Natural Pigment
Natural Pigment
Natural pigment is a natural coloring substance extracted and purified from plants,
animals, and microbial resources. In the last article we introduced the classification of
natural pigments, we know: according to the chemical structure of natural pigments, it
can be divided into pyrrole pigments (such as chlorophyll), carotenoid pigments,
anthocyanin pigments, flavonoid pigments (such as curcumin). , quinone pigments
(such as carmine), etc. According to its solubility, it can be divided into water-soluble
pigment and fat-soluble pigment, etc. Depending on the source, it can be broken down
into plant pigments, such as carotene in carrots, lycopene in tomatoes, etc. Animal
pigments, such as heme in muscle, astaxene in shrimp shells, etc. Microbial pigment,
such as red koji pigment on the surface of fermented tofu.
The types of natural pigments.
Plant pigments
Plant pigments are widely distributed in herbal plants, including fat-soluble chloroplast
pigments and water-soluble cytochrome pigments. The first exists in chloroplasts and is
related to photosynthesis. This type of pigment is insoluble in water, difficult to dissolve
in methanol, and easily soluble in high concentrations of ethanol, ether, chloroform,
benzene, and other organic solvents. The latter is related to the color of flowers, mainly
anthocyanins, also known as anthocyanins, exist widely in flowers, soluble in water and
ethanol, insoluble in ether, chloroform and other organic solvents, lead acetate reagent
will precipitate and can be adsorbed by activated carbon, its color will change with pH.
Animal Pigment
Animal pigments are mainly distributed in muscles, circulatory system, visual organs,
and body surface, etc. Most of them are produced by the endocrine system triggered
by nerve signals and have specific physiological functions. The natural pigment
animals that are used for food are mainly some large mammals, such as domestic
animals that can extract bilirubin and eat heme, while insects are mainly lac worms and
mealybug worms.
Micro Animal Pigment
Monascus pigment is the most widely used natural food microbial pigment, which is a
high-quality natural food pigment produced by the fermentation of Monascus
filamentous fungi, and is the secondary metabolite of Monascus. Monascus pigment is
a natural red pigment that is widely used in food colorants by fermentation, extraction,
concentration and refining of rice and soybeans as main raw materials by monascus
aspergillus or red rice as raw materials by extraction and concentration.
