The Model DA provides precise portion control for the


forming of hamburgers, meatballs, croquettes, fish cakes,
butter, cheese, as well as certain cookie and pie dough.
The Bridge Accupat Model DA Food Shaper is designed
to produce up to 3,000 "homemade" style patties or 9,000
meatball size portions per hour. Product can be formed in
a variety of shapes including, but not limited to, round,
square, oval, and choppette with custom designs available.
Ease of operation and versatility. The Model DA uses
rotating propellers in the hopper to gently feed the product
into the turntable cavities. The Model DA offers precise
weight control, versatility, and safety. No tools are reqUired
to disassemble for cleaning. It is ideal for restaurants,

In the mid 1990's we changed our Model D/DA pistons.

The old style piston simply has a stem with a rounded end and a groove that
accepts an e-c1ip style retaining ring.

The newer style piston has a stem with a chamfered end and a groove
designed to accept a white plastic cap held in place by a clip.

Food approved aluminum is used for all food contact parts as standard equip-
ment (turntable, container base and propeller); however, these parts can be
furnished in nickel silver if so desired (request quotation).

GENERAL INFORMATION

The Model DA ACCUPAT Food Shaper is a heavy duty junior model recommended
for most mass feeding establishments. The machine will delivery 2400 - 4"
diameter patties per hour or 2800 - 3-1/2" , 3" or 2-1/2" diameter patties
per hour on materials determined to be suitable for automatic handling.
Typical products are ground beef, pork, hash, fish cakes, corned beef,
veal patties, meatballs, some pastry doughs and sandwich filling, etc.

The Model DA is powered by a 1/3 HP, 60 cycle, 115/230 volt, AC, single
phase motor..

START-UP INSTRUCTIONS

CAUTION: READ THE FOLLOWING INSTRUCTIONS BEFORE OPERATING THIS MACHINE.


FAILURE TO DO SO CAN RESULT IN SERIOUS DAMAGE TO THE MACHINE
AND NULLIFY THE WARRANTY.

A. Remove the machine from its shipping crate with care. If the machine
is dropped or severely bumped it can be damaged.

B. The machine has been cleaned of oil before shipping. It is imperative


that various moving parts be lubricated with a tasteless vegetable or
mineral oil before operating. Follow these instructions carefully:
(Refer to numbers on drawing 2066042).

1. Remove the hopper (item 94) by turning it clockwise and lifting


it off when position lugs (item 104) are clear.
2. Remove the propeller (items 97, 96 and 95) by turning them counter-
clockwise and lifting them off.
3. Remove the container base (item 93) by removing the two wing nuts
(item 66) and lifting it off.
4. Remove the turntable (item 2) by removing the turntable nut (item 1)
and lifting it off.

Oil the following parts with a light application of tasteless vegetable or


mineral oil. Use a small oil can, a brush or a small atomizer. One pint
of lubricant is shipped with each machine.

1. Item 73 - Stationary cam--oil top surface


2. Item 124- Cam plate--oil top surface and at items 113, 121, 122 and 123
3. Item 63 - Turntable bearings--oil both bearings lightly
4. Item 78 - Turntable drive collar--three drops in oil hole provided
5. Item 4 - Piston guide--oil inside of guide holes lightly
6. Item 3 - Piston--oil stem only
7. Item 96 - Meat stop--three drops in oil hole provided

Assemble all parts and check turntable clearance to prevent galling between
turntable and hopper base. To adjust properly proceed as follows:

1. Be sure turntable nut (item 1) is tight.


2. Be sure container base wing nuts (item 66) are tight.
3. Check clearance between container base and turntable with a feeler
gauge (provided with the machine) to maintain .003 clearance at the
discharge side of the container base. If this clearance is not .003
adjust the set screws (item 81) until this clearance is correct.
This adjustment may seem difficult at first, but with a little
practice it becomes very simple. (See detailed "Turntable Adjustment"
instructions on page 4).

CAUTION: When running the machine withoutproduct be sure the container base
wing nuts (item 66) are loose. This will prevent scratching or
galling of the turntable surface.

Jog the machine (flip the switch "on" and "off" in short intervals) until
you are sure all parts are free. If the machine runs freely see the Operat-
ing Instructions for proper operation.

OPERATING INSTRUCTIONS

1. Never start the machine before recommended start-up and daily


lubrication instructions have been followed (see page 1), plug in
electric service cord and start machine by turning on the electric
switch.

IF YOUR MACHINE HAS A CRUMB BOX ATTACHMENT fill the small crumb box
hopper with crumbs so as to first provide a coating of crumbs on the
turntable. Be sure that crumbs are thoroughly dry. Bread crumbs are
the best medium as cracker and other types of meal tend to gum up.

IF YOUR MACHINE HAS A WATER DISPENSER - fill with water and set valve
so as to allow a small amount of water to drip on the turntable. This
is done to assist in release of product from the turntable on sticky
products.

2. Put food mixture into hopper. This may be done continuously without
stopping the machine. MEAT PRODUCTS SHOULD BE 28° TO 34° F. FOR BEST
OPERATION.

3. Face the machine from the side where the patties emerge and when the
piston is up, flush with the top of the turntable, slide the hand
spatula under the patty and remove (throw the first partially formed
patties back into the hopper).

Do not follow the patty around if you miss it but let it go under the
safety lip to come around again.

4. Weight of the patties may be varied by adjusting the piston. Loosen


wing nut (item 66) on cam plate (item 124) and turn the adjusting cam
wheel (item 118) counterclockwise until the patties being formed are
heavier than needed then turn the wheel clockwise until the patties
are the desired weight. This procedure allows for any looseness in
the adjusting linkage. After the proper setting has been made be sure
to tighten the wing nut (item 66). Never make this adjustment unless
the wing nut (item 66) on cam plate (item 124) is loose or linkage parts
in the adjusting mechanism will be damaged or broken.

CLEAN-UP OR WASHING

Wash all parts that contact product daily or at the end of the run. Use
hot water and non-alkali base cleaner or deter&ent but avoid caustic soap.
Be very careful in handling the parts. Rough handling can result in
damage to costly parts. We recommend that the following parts be disassembled
for cleaning:

1. Remove the hopper (item 94). Turn clockwise and lift it off
the container base (item 93).
2. Remove the single blade propeller (item 97) by turning it clock-
wise and lifting. Then remove the meat stop (item 96) and the
four blade propeller (item 95).
3. Remove the container base (item 93) by removing wing nuts (item
66) and lift the base off.
4. Remove the turntable locknut (item 1) and lift off the turntable
(item 2).

Proceed to wash down as outlined above and reassemble by reversing the dis-
assembly procedure above. When reassembling the turntable the locating studs
(item 109) must engage the holes in the turntable, press down lightly on the
turntable and tighten the turntable locknut (item 1) securely by hand.

LUBRICATION

For detailed daily lubrication instructions see Start-Up Section of this


manual, Page 1. An atomizer or spray used with a light'mineral oil after
each washing and for daily lubrication of your ACCUPAT will minimize wear
and greatly increase the life of the machine.

Use only light mineral oil which can be purchased at any drug store.
Medicinal mineral oil is odorless and tasteless and will not impart odor
or taste to the food. One pint of lubricant is shipped with each machine.

Do not over-lubricate food contact parts as the mineral oil working between
metal parts will produce a harmless but undesirable dark coloring.

Points of lubrication are as follows: (See dwg. 2066042)

1. Stationary cam (item 73)


2. Adjusting cam plate (item 124)
3. The turntable drive collar (oil hole provided), item 78
4. Each of the piston stems and spring assemblies (items 6 & 3)
5. Oil motor occasionally
6. The gear box is lubricated and sealed at factory. No further
lubrication will be required.

MAINTENANCE INSTRUCTIONS

No automatic machine is any better than the care it is given in operation


and maintenance. The following information should be read carefully.

TURNTABLE ADJUSTMENT

Correct turntable clearance with respect to the container base is a very


important point. This clearance should be .003 and can be checked with a
feeler gauge which is provided with this machine. The point at which to
check this clearance is at the discharge side of the container base. (That
is, the point vhere the patties are formed and emerge from under the con-
tainer base). Before checking this clearance be sure the turntable lock-
nut (item 1) is hand tight and the container base wing nuts (item 66) are
also hand tight. Do not use wrenches to tighten these items.

If the clearance is not .003 proceed as follows to correct this. Loosen


the container base wing nuts (item 66). Use a 1/4" Allen wrench and
adjust the Allen screws (item 81). The two rear Allen screws will provide
a tipping action and the two side Allen screws will allow for side adjust-
ment for stability. After the 1/4" Allen screws have been adjusted, snug
up the container base wing nuts and check the clearance. Although this is
a trial and error procedure after a little practice it will become a
simple operation.

It is always beat to keep the turntable bearings (item 63) in contact with
the underside of the turntable. Although these bearings do not have a slot
for adjustment the bearing stud hole is oversized which will provide some
adjustment. This adjustment can be made by loosening the 1/2-13 hex nut
slightly and tapping the stud and bearing into position as desired. Don't
forget to retighten the 1/2-13 hex nut when this adjustment is made.

LUBRICATION AND CLEANING

Lubrication and proper cleaning are very important to this machine and the
instructions in this manual pertaining to start-up and clean-up must be
followed precisely.

The motor should be lubricated with 6 drops of a good grade of No. 10 motor
oil every 6 months.

SHEAR PINS

If an excessive load is applied to the machine, one of the four shear pins
will shear off to safeguard against serious damage to the machine. One of
these pins is located in the turntable drive collar (item 78); if the
hopper propellers turn and the turntable doesn't, replace this pin. A
second pin is located in the propeller drive collar (item 79); if the turn-
table revolves and the propellers don't, replace this pin.

Normally, if any trouble is encountered one of the two pins mentioned above
will shear, and by following the simple disassembly instructions as outlined
in the Start-Up and Lubrication Sections of this manual, the necessary repair
can be completed within a very few minutes.

There are third and fourth pins located in the main transmission (item 54).
If neither the turntable nor the hopper propellers will turn the transmission
pins are properly sheared. To change these pins, it is necessary to follow
these steps.

1. Remove the container base assembly (item 93) completely. This


includes the meat stop and the one and four blade propellers.
2. Remove the turntable (item 2).
3. Loosen the 3/8-16 hex nut (item 44) on motor adjustment.
4. Remove the 3/8-16 x 1-1/2" hex head motor adjustment screw. (Item 129)
5. Remove the belt (item 56).
6. Looking down on the top side of the head assembly (item 68) you will
see three 1/4" hex head screws around the base of the container base
support. Remove these bolts and the transmission can be removed.

7. Remove the three Allen head screws and the one flat head screw that
holds the upper transmission casting in place. Be sure when replac-
ing these bolts that the flat head bolt is replaced in the same hole

it has been removed from. If an Allen head screw is put in this hole
the head of the screw will interfere with the 120 tooth spur gear
(item 47) and break this gear.
8. With the upper casting screws removed, the propeller shaft (item 51)
can be removed from the transmission. The lower main spur gear is
pinned to the shaft with a pin on each side of the gear. If the gear
is removed from the shaft be sure the short hub side of the gear is on
the outside or lowest end of the shaft before pinning the gear in place.
One aide of the gear hub is shorter than the other so it will properly
fit into the lower transmission case bushing.
