Food approved aluminum is used for all food contact parts as standard equip-
ment (turntable, container base and propeller); however, these parts can be
furnished in nickel silver if so desired (request quotation).
GENERAL INFORMATION
The Model DA ACCUPAT Food Shaper is a heavy duty junior model recommended
for most mass feeding establishments. The machine will delivery 2400 - 4"
diameter patties per hour or 2800 - 3-1/2" , 3" or 2-1/2" diameter patties
per hour on materials determined to be suitable for automatic handling.
Typical products are ground beef, pork, hash, fish cakes, corned beef,
veal patties, meatballs, some pastry doughs and sandwich filling, etc.
The Model DA is powered by a 1/3 HP, 60 cycle, 115/230 volt, AC, single
phase motor..
START-UP INSTRUCTIONS
A. Remove the machine from its shipping crate with care. If the machine
is dropped or severely bumped it can be damaged.
Assemble all parts and check turntable clearance to prevent galling between
turntable and hopper base. To adjust properly proceed as follows:
CAUTION: When running the machine withoutproduct be sure the container base
wing nuts (item 66) are loose. This will prevent scratching or
galling of the turntable surface.
Jog the machine (flip the switch "on" and "off" in short intervals) until
you are sure all parts are free. If the machine runs freely see the Operat-
ing Instructions for proper operation.
OPERATING INSTRUCTIONS
IF YOUR MACHINE HAS A CRUMB BOX ATTACHMENT fill the small crumb box
hopper with crumbs so as to first provide a coating of crumbs on the
turntable. Be sure that crumbs are thoroughly dry. Bread crumbs are
the best medium as cracker and other types of meal tend to gum up.
IF YOUR MACHINE HAS A WATER DISPENSER - fill with water and set valve
so as to allow a small amount of water to drip on the turntable. This
is done to assist in release of product from the turntable on sticky
products.

2. Put food mixture into hopper. This may be done continuously without
stopping the machine. MEAT PRODUCTS SHOULD BE 28° TO 34° F. FOR BEST
OPERATION.
3. Face the machine from the side where the patties emerge and when the
piston is up, flush with the top of the turntable, slide the hand
spatula under the patty and remove (throw the first partially formed
patties back into the hopper).
Do not follow the patty around if you miss it but let it go under the
safety lip to come around again.
CLEAN-UP OR WASHING
Wash all parts that contact product daily or at the end of the run. Use
hot water and non-alkali base cleaner or deter&ent but avoid caustic soap.
Be very careful in handling the parts. Rough handling can result in
damage to costly parts. We recommend that the following parts be disassembled
for cleaning:
1. Remove the hopper (item 94). Turn clockwise and lift it off
the container base (item 93).
2. Remove the single blade propeller (item 97) by turning it clock-
wise and lifting. Then remove the meat stop (item 96) and the
four blade propeller (item 95).
3. Remove the container base (item 93) by removing wing nuts (item
66) and lift the base off.
4. Remove the turntable locknut (item 1) and lift off the turntable
(item 2).
Proceed to wash down as outlined above and reassemble by reversing the dis-
assembly procedure above. When reassembling the turntable the locating studs
(item 109) must engage the holes in the turntable, press down lightly on the
turntable and tighten the turntable locknut (item 1) securely by hand.
LUBRICATION
Use only light mineral oil which can be purchased at any drug store.
Medicinal mineral oil is odorless and tasteless and will not impart odor
or taste to the food. One pint of lubricant is shipped with each machine.
Do not over-lubricate food contact parts as the mineral oil working between
metal parts will produce a harmless but undesirable dark coloring.
MAINTENANCE INSTRUCTIONS
TURNTABLE ADJUSTMENT
It is always beat to keep the turntable bearings (item 63) in contact with
the underside of the turntable. Although these bearings do not have a slot
for adjustment the bearing stud hole is oversized which will provide some
adjustment. This adjustment can be made by loosening the 1/2-13 hex nut
slightly and tapping the stud and bearing into position as desired. Don't
forget to retighten the 1/2-13 hex nut when this adjustment is made.
Lubrication and proper cleaning are very important to this machine and the
instructions in this manual pertaining to start-up and clean-up must be
followed precisely.
The motor should be lubricated with 6 drops of a good grade of No. 10 motor
oil every 6 months.
SHEAR PINS
If an excessive load is applied to the machine, one of the four shear pins
will shear off to safeguard against serious damage to the machine. One of
these pins is located in the turntable drive collar (item 78); if the
hopper propellers turn and the turntable doesn't, replace this pin. A
second pin is located in the propeller drive collar (item 79); if the turn-
table revolves and the propellers don't, replace this pin.
Normally, if any trouble is encountered one of the two pins mentioned above
will shear, and by following the simple disassembly instructions as outlined
in the Start-Up and Lubrication Sections of this manual, the necessary repair
can be completed within a very few minutes.
There are third and fourth pins located in the main transmission (item 54).
If neither the turntable nor the hopper propellers will turn the transmission
pins are properly sheared. To change these pins, it is necessary to follow
these steps.
7. Remove the three Allen head screws and the one flat head screw that
holds the upper transmission casting in place. Be sure when replac-
ing these bolts that the flat head bolt is replaced in the same hole
•
it has been removed from. If an Allen head screw is put in this hole
the head of the screw will interfere with the 120 tooth spur gear
(item 47) and break this gear.
8. With the upper casting screws removed, the propeller shaft (item 51)
can be removed from the transmission. The lower main spur gear is
pinned to the shaft with a pin on each side of the gear. If the gear
is removed from the shaft be sure the short hub side of the gear is on
the outside or lowest end of the shaft before pinning the gear in place.
One aide of the gear hub is shorter than the other so it will properly
fit into the lower transmission case bushing.
