Mediterranean
Quinoa Salad

Ingredients
• 1 cup cooked quinoa
• 1 cucumber, diced
• 1 cup cherry tomatoes, halved
• 1/2 red onion, thinly sliced
• 1/2 cup Kalamata olives, pitted and halved
• 1/4 cup crumbled feta cheese
• 2 tablespoons extra-virgin olive oil
• 2 tablespoons lemon juice
• 1 teaspoon dried oregano
• Salt and pepper to taste

Instructions
1. In a large bowl, combine the cooked quinoa, cucumber, cherry tomatoes, red onion, Kalamata olives, and feta cheese.
2. In a small bowl, whisk together the olive oil, lemon juice, dried oregano, salt, and pepper.
3. Pour the dressing over the quinoa mixture and toss to combine.
4. Refrigerate for at least 1 hour to allow the flavors to meld together.
5. Serve chilled and enjoy!

Teriyaki
Chicken Stir-Fry

Ingredients
• 2 boneless, skinless chicken breasts,
thinly sliced
• 1 cup broccoli florets
• 1 red bell pepper, thinly sliced
• 1 carrot, thinly sliced
• 1/2 cup snap peas
• 2 tablespoons low-sodium teriyaki sauce
• 1 tablespoon sesame oil
• 1 tablespoon cornstarch
• 1/4 cup water
• Sesame seeds for garnish

Instructions
1. In a small bowl, whisk together the teriyaki sauce, sesame oil, cornstarch, and water. Set aside.
2. Heat a large skillet or wok over medium-high heat and add a drizzle of oil.
3. Add the chicken to the skillet and stir-fry until cooked through. Remove from the skillet and set aside.
4. In the same skillet, add the broccoli, red bell pepper, carrot, and snap peas. Stir-fry until the vegetables are crisp-tender.

and Corn
Quesadillas

Ingredients
• 1 can black beans, drained and rinsed
• 1 cup frozen corn, thawed
• 1/2 red bell pepper, diced
• 1/4 cup chopped fresh cilantro
• 1 teaspoon cumin
• 1/2 teaspoon chili powder
• Salt and pepper to taste
• 4 whole wheat tortillas
• 1 cup shredded cheddar cheese
• Guacamole, salsa, and sour cream
for serving

Instructions
1. In a large bowl, combine the black beans, corn, red bell pepper, cilantro, cumin, chili powder, salt, and pepper.
2. Lay out the tortillas and divide the black bean mixture evenly among them, spreading it over one half of each tortilla.
3. Sprinkle the shredded cheddar cheese over the black bean mixture.
4. Fold the tortillas in half to create a quesadilla.
5. Heat a large skillet over medium heat and cook the quesadillas for 2-3 minutes on each side, until the cheese is melted
and the tortillas are crispy.
6. Cut into wedges and serve with guacamole, salsa, and sour cream.

Lemon Garlic
Shrimp Pasta

Ingredients
• 8 ounces whole wheat spaghetti
• 1 pound shrimp, peeled and deveined
• 4 cloves garlic, minced

• Zest and juice of 1 lemon
• 1/4 teaspoon red pepper flakes
• Salt and pepper to taste
• Fresh parsley for garnish

Instructions

• 1/4 cup chopped peanuts
• 2 tablespoons sesame oil
• 2 tablespoons low-sodium soy sauce
• 2 tablespoons peanut butter
• 1 tablespoon rice vinegar
• 1 tablespoon honey
• 1 clove garlic, minced
• 1 teaspoon grated fresh ginger
• Lime wedges for serving

Instructions
1. Cook the rice noodles according to package instructions. Drain and set aside.
2. In a large bowl, combine the shredded cabbage, shredded carrots, red bell pepper, cilantro, and chopped peanuts.

best advice I could give to aspiring models is to set
yourself a goal and don’t give up until you reach it.
Make sure that you always have that one person or
manager you can trust who helps you reach your
goals. Be yourself, have your own style, and don’t be
scared to be different. Promote yourself as much as
possible, work hard, then play harder.
