LIQUEUR

A liqueur is an alcoholic drink composed of spirits and additional flavorings such as sugar, fruits, herbs,
and spices. Most liqueurs range between 15% and 55% alcohol by volume.

Liqueur Category
1. Under general brand
is the liqueur that can made by many distilleries with non specific name and formula.
Example ; bols, de Kuyper , balimoon , marie
bizard ets

2. Propietary liqueur
A proprietary liqueur is made by a single producer, has a trademarked name and is created with a
specific formula.
Example ; Grand Marnier, Sambucca, Cointreau etc

Liqueur Production
- Cold Compounding
Liquid flavoring essences are combined with neutral alcohol. This method is quick and rather easy but
tends to produce liqueurs that lack real depth or mouthfeel.

- Re(Distillation)
Just like good-quality gin: add your flavoring agents (herbs, fruits, what-not) to the spirit and re-distill it.
Distillation is normally used for harder ingredients like fruit peels, seeds, and roots, and produces a clear
distillate.

- Maceration/Infusion
This is better for soft fruit that would disintegrate if distilled: the fruit or herbs are left sitting around in
neutral spirit until they absorb the flavor. The mixture may be heated slightly, and different herbs and
fruits may be added at different times depending on how long it takes to extract their flavor. This
produces a coloured distillate called a tincture.

- Percolation
Just like making filter coffee: put your (hard) ingredients into a filter and drip alcohol down through
them. Percolation produces a dark, typically slightly bitter distillate called a tincture. Bols Cacao Brown
liqueur and Cacao White are made from the same ingredients, but Cacao Brown is percolated and Cacao
White is re-distilled, the techniques have a huge effect on the flavor.
Type Of Liqueur
- Fruit Liqueur
Is the liqueur that has a fruit flavor and taste. For making flavorings, distillers may choose to use natural
flavorings (all the flavor is extracted from the fruit itself) or nature-identical flavorings (you extract the
identical flavor compounds from other, cheaper fruits). Fruit liqueurs are also the ones most likely to be
used in cocktails, and many of them have been developed into consumer-oriented brands in their own
right.

- Nut Liqueur
Is the liqueur that has a nutty flavor and taste. These are liqueur usually percolated. Hugely popular with
consumers, this category includes Amaretto, Frangelico.

- Herbal
Is the liqueur that has a herbal flavor and taste. These liqueurs are typically made from many different
botanicals, included aniseed liqueurs (absinthe,sambuca, jagermeister) and bitter liqueurs (Campari and
Aperol).

- Cream
Is the liqueur that has a creamy flavor and taste. This entire category was kick-started by Baileys in 1975.
Into this category can also be shoehorned Advocaat, a Dutch distillate made from an emulsion of egg
yolks and spirit.

- Spirit Base
The liqueur that describes fruit, nut, herbal, or cream liqueurs using a specific, flavorful base instead of
just neutral spirits. Baileys (Irish whiskey),Grand Marnier (cognac), Drambuie (Scotch), and Southern
Comfort (American whiskey).
Campari is an Italian alcoholic liqueur, considered an apéritif, obtained from
the infusion of herbs and fruit in alcohol and water. It is a bitters, characterized
by its dark red colour.

Tasting Notes : Campari has a strong bittersweet flavor, with notes of orange
peel, cherry, clove, and cinnamon. It's one of the most bitter liqueurs used in
modern drinks.

Aperol is an Italian bitters apéritif made of gentian, rhubarb, and cinchona,


among other ingredients. It has a vibrant orange hue. Aperol is a softer, slightly
sweeter, slightly less alcohol content version of Campari.

Tasting Notes : zesty orange with complex herbal scents harmonized with a
touch of vanilla

Jägermeister is a German digestif herbal liqueur that is made with 56 herbs


and spices. Developed in 1934 by Wilhelm and Curt Mast, it has an alcohol by
volume of 35%.

Tasting Notes : nose of cloves, cinnamon, ginger and menthol


with hints of cardamom and allspice
Baileys Irish Cream is a liqueur made with Irish whiskey, cream, and cocoa
that's manufactured in Ireland. It was invented in 1973 and went on to
become the top selling liqueur worldwide.

Tasting Notes : Creamy milk,sweet on palate

Cointreau is a clear, orange-flavored liqueur made from sweet and bitter


orange peels. It is known as a type of Triple Sec, the name for a category
of dry orange liqueurs, which translates to “triple dry” in French.
Cointreau was introduced in the 1880's in France.

Tasting Notes : A complex blend of orange peel essences, it is zesty,


fresh, floral & sweet

Grand Marnier is a French brand of liqueurs. The brand's best-known


product is Grand Marnier Cordon Rouge, an orange-flavored liqueur
created in 1880 by Alexandre Marnier-Lapostolle. It is made from a
blend of Cognac brandy, distilled essence of bitter orange, and sugar.
Grand Marnier Cordon Rouge is 40% alcohol.

Tasting Notes : Vanilla cognac nuances with hints of candied zest on the
aroma followed by Bitter orange, balanced by cognac notes of hazelnuts
and toffee with a long, harmonious finish.
Kahlúa is a brand of coffee liqueur owned by the Pernod Ricard company
and produced in Veracruz, Mexico. The drink contains rum, sugar, and
arabica coffee.

Tasting Notes : Kahlua has a full-bodied, rich and sweet flavor. It tastes
strongly of coffee, with notes of vanilla and caramel on the finish.

A coffee liqueur made from indonesia that combining the best coffee

Tasting Notes : Kahlua has a full-bodied, rich and sweet flavor. It tastes
strongly of coffee, with notes of vanilla and spices on the finish.

Brem is a mellow rice wine made from fermented white and black
glutinous rice with 5% alcohol.

Tasting Notes : Rich, Unique, pleasant bitter aftertaste


Is a traditional spirit made from fermented glutinous white rice with 40%
alcohol.
