Flour
All-Purpose Flour
Flour that contains no baking powder, suitable for “quick” breads or bread
made with the Quick settings. Bread flour is better suited for yeast breads.
Bread Flour
Bread flour is the most important ingredient of making bread and is
recommended in most yeast-bread recipes. It has a high gluten content and
can keep the size of the bread from collapsing after rising. Flour varies by
region. For example, American flour is milled from hard spring wheat; Canadian
flour is milled from hard winter wheat.

Self-Rising Flour

use self-rising flour in combination with yeast.

KBS Bread Maker Manual: MBF-010 User Guide & Recipes (PDF) 10/11/24, 6:28 PM
Whole-Wheat Flour
Whole-wheat flour is ground from the entire wheat kernel. Bread made with all
or part whole-wheat flour will have higher fiber and nutritional content. Whole-
wheat flour is heavier and, as a result, loaves may be smaller in size and have a
heavier texture.
Yeast
Yeast is a living organism and should be kept in the refrigerator to remain fresh. It
needs carbohydrates found in sugar and flour as nourishment. Yeast used in bread
maker recipes will be sold under several different names: Bread machine yeast
(preferred), active-dry yeast, and instant yeast. Before using, check the expiration date
of the yeast. Return to refrigerator immediately after each use.
Sugar
Sugar is “food” for the yeast and also increases the sweet taste and color of bread. It is
very important for the color and flavor of the bread. White sugar is normally used;
however, brown sugar, powdered sugar, or cotton sugar may also be called for in some
recipes. Do not substitute with powdered sugar, brown sugar or other artificial
sweeteners unless indicated.
Salts
Salt in bread is NOT just a matter of taste! Salt restrains the growth of the yeast, and
improves elasticity and structure. If you reduce or eliminate salt from the bread, it will
rise excessively – if you use too much salt the loaf will not rise enough. Use common
table salt.
Butter
https://manuals.plus/kbs/kbs-mbf-010-bread-maker-user-manual Page 29 of 77
KBS Bread Maker Manual: MBF-010 User Guide & Recipes (PDF) 10/11/24, 6:28 PM
Butter makes breads soft and glossy. Measured and cut into small pieces.
Water
When bread machine baking, all liquids, particularly water, should be 80°F (27°C)
unless stated otherwise. Temperatures too cool or too warm can prevent the yeast from
activa ting.
Milk
Whole, semi-skimmed or skimmed milk can be used in bread making but it should
always be added lukewarm. Refrigerated milk must be heated to around 80ºF (27ºC).
Never heat milk above 98ºF (37ºC) as this can cause problems with yeast.
Egg
Eggs can improve bread texture and make the bread larger in size. The egg must be
whisked in with the other liquid ingredients.
https://manuals.plus/kbs/kbs-mbf-010-bread-maker-user-manual Page 30 of 77

Regular maintenance of your appliance will keep it safe and in proper operational order.
Before cleaning always disconnect the appliance from the mains supply.Wash
removable parts in warm, soapy water then rinse and dry all parts. Allow the bread
maker and all accessories to cool completely before disassembling and cleaning.
Wipe the exterior of the stainless steel housing and the LCD screen with a soft,
damp cloth. A non-abrasive liquid cleanser or mild spray solution may be used to
avoid build-up of stains. Apply the cleanser to the sponge, not the outer surface or
LCD screen, before cleaning. Do not use a dry paper towel or cloth to clean the LCD
screen, or use an abrasive cleanser or metal scouring pad to clean any part of the
bread maker as these will scratch the surface.
NOTE:
Never immerse the stainless steel housing in water or place in the dishwasher. Take
care not to allow water or cleaning fluids to seep under the buttons or LCD screen on
the control panel.
If over-spills such as flour, nuts, raisins etc. occur in the interior baking chamber,
carefully remove them using a soft, damp cloth. Use extreme caution when cleaning
the heating elements. Ensure the bread maker is completely cool then gently rub a
soft, damp sponge or cloth along the length of the heating element. Do not use any
type of cleanser or cleaning agent.
Let all surfaces dry thoroughly prior to inserting the power plug into a power outlet.

Ingredients
Can other bread recipes be made in this machine?
Results may vary when using other recipes as the recipes in this booklet are sized so
that the dough is kneaded properly and the finished bread does not exceed the bread
pan capacity. Use only recipes with similar quantities of ingredients. As a general guide,
a minimum 2 cups and maximum 4.5 cups of total dry ingredients is recommended on
the bread settings. On the jam setting, as a general guide, a maximum 3 cups of fruit
should be used.

powder. Do not use the Delay Start feature with perishable ingredients.
Why do the ingredients need to be placed in the bread pan in the specified order?
To ensure all dry ingredients are mixed with the water and to avoid the yeast activating
prematurely with the water, salt or sugar when using the Delay Start feature.

Occasionally air bubbles will concentrate at a certain location during the last ‘rise’
phase and will bake in this state. This could be caused by too much water and/or yeast
or insufficient flour. Check the recipe ingredients and method of weighing/measuring.

KBS Bread Maker Manual: MBF-010 User Guide & Recipes (PDF) 10/11/24, 6:28 PM
How do i get support from kbs? the recipes in the manual dont work and the fruit
and nut dispenser won’t dispense. i am very frustrated with this!
This great Product has a really poor manual, KBS wcould have far fewer returned
machines & unhappý buyers, if they put out a radically better manual. They leave out so
much! The screen light is designed to dim so much buyers think its off. Manual should
inform buyers it goes dim & explain why. If your machine isn’t quiet return it. Something
is wrong. KBS is telling the truth. The machine is quiet & it does not move. We make
rustic, dense 100% Whole wheat bread it is quiet. Motor is powerful.
We have seen much more expensive ones rhat are loud & move. Our daughter’s
expensive Sunbeam walked off a counter & the plastic body cracked 1st use & its
noisey like our 1st 1980s bread machine. We called it R2 D2 as it resembled the robot.

Most all household devices use 120v. The voltage of a machine does not give you more
power.
Watts refer to the power of your device. More wattage gives more power.
A 120V, 650w machine will give you more power than a 120V, 550w machine.
Look for the wattage on your label. Probably near the voltage
Can you give more instructions for the yogurt setting? I don’t see very detailed
instructions in the manual.
To make yogurt, first you must kill all bacteria. purchased a digital quick read
thermometer. This makes the whole process so much easier because you can set the
temperature alert to 180°F and the alarm will go off when it reaches that temperature.
Then cool to about 100°F. Then add active plain yogurt as the starter. All a yogurt
maker does is keep the milk warm as it ferments. I find 8 hrs good as to length to
ferment. Then refrigerate. Keep container, jars, etc very clean or bad bacteria will ruin
the yogurt. You can dissolve plain gelatin in a little hot water and add before heating to
180 °F to pasteurize to make a thicker yogurt. There are all kinds of free advice and
recipes online just google “making yogurt”. Then add flavoring after the yogurt
ferments. I just like simple wheat germ & honey. If sometimes just add generic
aspartame only. Sugar free then.
There’s really no reason for it to ever get very dirty. Unplug the machine and then I have
wiped out the inside with a damp cloth. All that ever gets inside the machine is maybe a
bit of flour and some cooked bread crumbs. I’ve put 200 pounds of flour through my
machine and it still looks clean inside. Everything should stay in the bread pan. Can’t
put it into a dishwasher for sure.
What are the dimensions of the bread pan, especially the length?
our bread machine temperatures and times are preset and tested by us. You don’t have

Is the coating sprayed onto the pan without plastics or glues? also, does it contain
pfoa, pfas, lead or cadmium?
Read the product description – they make a big deal that it is a ceramic coating and
free of all the bad stuff from the stuff you listed. It works really well and while I don’t
worry about those chemicals much – I’m happy to avoid them too – an added bonus for
me w this machine. HTH
Does this bread machine have a function that allows you to remove the paddle
