Ingredients
1 cup nancy’s cottage cheese filling:
1 large egg 2 tbsp melted butter
2 tbsp honey 3 tbsp coconut sugar
1 tsp vanilla extract 1 tbsp cinnamon
2 cup einkorn flour (may need more)

1 scoop Just Ingredients protein powder 1/4 cup unsalted butter, softened
1 packet active dry yeast (2 1/4 tsp) 1 cup powdered sugar
1/4 cup warm water (about 110°F) 1/2 tsp vanilla extract
1/4 tsp salt 1-2 tbsp milk or cream (for desired consistency)

Preparation
1. In a small bowl, mix the warm water and yeast, allowing it to sit for 5 minutes until it's frothy.
2. In a blender, combine cottage cheese, egg, honey, and vanilla until smooth.
3. In a large bowl, mix together the einkorn flour (may need more if sticky), Fit Flour, protein powder, and salt.
4. Add the cottage cheese mixture and activated yeast to the dry ingredients, stirring until a soft dough forms.
5. Knead the dough for about 5 minutes until smooth, adding a little extra einkorn flour if sticky.
6. Place the dough in a lightly greased bowl, cover it, and let it rise in a warm spot for about 1 hour or until it has doubled in size.
7. After rising, roll the dough out on a floured surface into a rectangle about 1/4 inch thick. Brush with melted butter and sprinkle
evenly with coconut sugar and cinnamon.
8. Roll the dough tightly from one long end to the other, then slice into 6-8 rolls.
9. Arrange the rolls in a greased 8×8 inch baking dish. Cover and let them rise again for 20-30 minutes.
10. Preheat the oven to 350°F (175°C). Bake the rolls for 18-20 minutes or until golden brown.
11. In a bowl, beat the softened butter and powdered sugar until light and fluffy.
12. Add vanilla extract and 1 tbsp milk or cream, mixing until smooth. Add more milk if needed to reach a spreadable consistency.
