Chicken Fajitas
Ingredients:
2 tablespoons oil
1 medium onion - sliced
1 medium green bell pepper - sliced
1 medium red pepper - sliced
1 lbs boneless, skinless chicken breasts.
¾ cup taco sauce
8 flour tortillas,warmed
Preparation:
1. Heat oil in a wok or skillet until hot. Add onion and bell peppers; sauté
until just soft, about 2 minutes.
2. Remove with a slotted spoon to a plate and set aside. Cut chicken into
½ inch strips and sauté in the same pan for about 5 minutes or
until the chicken is no longer pink and internal temperature is 165
Fahrenheit.
3. Return the vegetables to the pan along with the sauce and cook until
the sauce comes to a boil and thickens.
4. Remove the pan from the heat. Spoon the chicken and vegetable
mixture into warmed tortillas, roll up and serve.
