Party Recipe - 5

1) Cream of mushroom soup


Ingredients :-
50 gm all purpose flour (1/3 cup) 1/2 tsp sugar
100 ml milk (1/2 cup) 1 tsp aromatic powder
50 gms butter (3 -1/2 tbsp) 50 ml fresh cream (1/4 cup)
1 tsp Garlic (Chopped) 50 gm mushrooms (paste)
Salt to taste Fresh parsley as needed
METHOD:-
1) Heat butter. Saute all purpose flour in it. Add garlic and slowly add milk and
water as required.
2) Now, add salt, sugar, aromat powder and cook for a while.
3) Now, after the soup is ready, boil it properly and top it with remaining
mushrooms paste and garnish it with topping with fresh cream and parsley.
Serve hot soup.

2) Paneer Reshmi Kebab

Ingredients :-
300 gm paneer
1 onion
1 Tomato
1 Capsicum

Ingredients :- For Marination


100 gm Hungcard 1 tbsp cashew powder
1 tbsp mustard oil Black salt as needed
1 tbsp ginger and garlic paste Dry mint powder as needed
1 tsp Kasuri methi Butter (for brushing)
1 tsp chaat masala 2 tbsp fresh cream

METHOD:-
1) Mix all the ingredients of marinade.
2) Prepare the paneer by cutting it into cubes.
3) Marinate the paneer cubes and keep aside for 3 to 4 hours.
4) Now, grill it at 2500 to 3000 degrees for 15 minutes or in the oven. Serve hot silk
kebabs.

3) Paneer Dilkhush Handi

Ingredients :- For Base


20 gms Makhana
3 - 4 tbsp oil
Cinnamon, cloves, nuts (whole spices) as required
4 Onion (sliced)
3 Tomatoes (sliced)
50 gm cashew pieces

Ingredients :- For Gravy


3 tbsp oil 1 tsp degi red chilli powder 200 gms paneer cube
1 tsp ginger paste 1 tsp kitchen king masala ¼ cup fresh cream
1 tsp garlic 1 tbsp coriander- cumin powder 2tbsp mawa
1 tsp green chillies 1 tsp turmeric Salt as per taste
Prepare base
METHOD:-
1) Roast the makhana and keep aside.
2) Heat oil in a pan and add all the spices and then add onion slices and let it
turn brown.
3) Add tomatoes and fry for a while. Add cashew nuts and cook for a while.
4) Make a smooth paste by cooling and grinding.
5) Heat oil in another pan, add ginger-garlic and chilli paste and then add the
prepared gravy.
6) Add all the powdered masala and cook for a while, add water as required
and add paneer cubes.
7) Finally, add cream, mava and butter and cook for a while.
8) Serve with hot vegetable naan or paratha

4) sharbati Pulav
Ingredients :-
400 gm boiled rice (2 cups) 1 cup par boiled vegetable
3 tbsp ghee (Carrots, French beans, Flavour, Peas, Onions)
1 tsp cumin seeds
1 bay leaf 1 tsp saffron milk / water
2 tbsp cashew nuts 1 tsp rose water
1 tbsp pistachios 3 - 4 drops of Kevada water
Makhana 3 tbsp Fruit Cocktail (Mix Fruit Tin Juice)
Salt to taste
METHOD:-
1) Heat ghee in a pan. Add cumin seeds and bay leaf, then add cashew nuts,
pistachios and makhana and brown. Add onion and let it brown.
2) Now, add boiled vegetables and add boiled rice and mix well.
3) Now add saffron milk, rose water, kevada water and salt and mix well.
4) Finally add cream and mix well.

5) Malai Malpua

Ingredients :- for Syrup)


500 gms sugar
500 ml water
Kevada Water (3 - 4 drops)

Ingredients :- For Malpua


500 gms Desi Ghee (for frying)
50 gms mawa / milk powder
200 ml milk
1 tsp fennel seeds
Pinch cardamom powder
100 gms all purpose flour
100 gms fresh malai (for topping)
2 tbsp dry fruits (cashew nuts, almonds, pistachio slices)
Silver foil (for topping)
METHOD:-
1) First make a syrup by combining sugar and water for syrup.
2) Heat ghee in a pan.
3) Mix all the ingredients for Malpua and make it better.
4) Fry in hot ghee and take it out. Dip in syrup and garnish with fresh malai
and dried fruit. Serve hot.
