• A database will be developed containing information on the animals that enter the

carried out since they present different faults that can affect the condition of the carcasses
due to poor refrigeration, therefore it is of utmost importance to record and compare the
temperatures in the refrigeration chambers to keep them in optimal conditions.
OBJECTIVES.

- Record and compare internal and external temperatures of the cooling chambers.
METHODOLOGY
•In order to achieve the objectives, set for the resolution of the problem, a series of steps
will be carried out during the development of the project, so they will be described in a
general way below:
1.Record and compare internal and external temperatures of refrigeration chambers.
2.Collect data from the animals.
3.Incorporating the data obtained into the Slaughtering sheets
4.Record the data of each animal in a database.

• To conclude this document and the stays, it should be noted that the most outstanding points and the most
important issues learned during this period of time are the long process that is carried out to slaughter an
animal and process the meat so that we as a population can have access to food. of good quality, since every
product is analyzed by a specialized veterinary doctor who is in charge of approving or denying the carcasses
obtained from each animal, which is why another of the most important points during this project is to achieve
proper maintenance of the carcasses. electrical installations to ensure that there are no faults that interrupt the
cooling of the refrigeration chambers and may cause an increase in temperature, thus affecting the meat, for
which it is necessary to constantly monitor the thermometers and thus ensure that the temperature is the
optimum in order to ensure a product in optimal conditions for the population of Encarnacion de Diaz Jalisco.
CONCLUSION
• Some recommendations that can be taken into account are: allocate more budget to an area as important as a
municipal slaughterhouse since, due to lack of resources, the facilities are not in the best possible state, nor are the
means of transport, which can cause delays in meat deliveries to recipients.
• Another recommendation for future research is to try to get staff to provide constant maintenance to each of the power
tools, such as the saws used to split the bones of animals, since they can become dangerous due to their poor
condition.
• Something else that can be carried out and that could not be carried out in this project due to the scarcity of resources
is the automation of the entire system for mounting and unloading the carcasses using a motorized system so that the
workers do not run the risk trying to lift the animals at the moment of hanging them to butcher them..
CONCLUSION
• The limitations of the project were many since resources were not authorized to carry out
an automation that facilitates the work carried out in these public facilities, on the other
hand there were many limitations to carry out the report of the activities since permission
was also denied. to photograph areas in which the work was performed and the photos
that were attached were without authorization at the risk of being discovered.
