Kombucha is a popular traditional tea prepared from different parts (leaves and flowers) of medic... more Kombucha is a popular traditional tea prepared from different parts (leaves and flowers) of medicinal plants, including the leaves of telang (Clitoria ternatea L.). The fermented tea is usually flavoured with sugar. However, the concentration of added sugar affects the content of kombucha phytochemicals. Therefore, this study aimed to analyse the content of phenols and flavonoids and the antioxidant activity (DPPH) of telang flower kombucha sweetened with sugar. Three tea formulas were prepared with sugar concentrations of 20%, 30%, and 40%, respectively. The tea's total phenols and flavonoid contents and DPPH free radical scavenging activity were assessed using UV-Vis spectrophotometric analysis. The results showed an increase in total phenols and flavonoid contents after the fermentation process of telang flower tea into kombucha, from 87.2 to 110.8 ppm and 2.14 to 3.44 ppm, respectively. The highest phenolic content value of 129.6 ppm was obtained at 30% sugar (p<0.05). Results also show that adding sugar was directly proportional to the total flavonoid content (p<0.05). The antioxidant activity increased proportionally to 83.2 ppm at 30% sugar concentration, hence classified under the strong category (p>0.05). Based on the results, the fermentation process and adding sugar could increase the total phenols, flavonoids, and antioxidant activity in the formulation of telang flower kombucha.

This study aimed to develop a formulation for high-fiber extrudate based on purple sweet potato and kidney bean and evaluate the nutritional value of the products and their satiety index after consumption. Optimization of the formula was carried out using four levels of purple sweet potato flour substitution with kidney bean flour: 0, 20, 30, and 40% (w/w). The extrudates were obtained using a double-screw extruder at 60°C, with the auger, screw, and cutter speeds of 40, 40 and 50 Hz, respectively. The satiety index determination involved 16 subjects with body mass index in optimal range, and data from the visual analogue scale (VAS) questionnaire were used at 0, 30, 60, 90, 120, 150, and 180 min after consumption of the test food. The product with the highest substitution (40%) of kidney bean was selected as the best based on the sensory acceptability and nutritive value -contents of protein and total fiber were 13.20 and 17.00 g in 100 g dry matter, respectively. The estimated shelf-life of this extrudate was 19 months. Satiety index values for commercial cereals, extruded purple sweet potato, and extruded purple sweet potato with kidney bean were 99, 104, and 140, respectively. This research showed that the consumption of high-fiber extruded sweet potato with kidney bean could significantly extend the feeling of fullness with low energy contribution so that it might prevent excess calorie intake contributing to overweight and obesity.

The objective of this research was to study antenatal care (ANC) practices and its association to... more The objective of this research was to study antenatal care (ANC) practices and its association to anaemia on adolescent pregnancies. A cross-sectional design was applied in Bogor City between January to March 2016. A number of 72 pregnant adolescents (aged 10-19 years) participated in the study. Hemoglobin was collected through venous blood and analyzed with cyanmethemoglobin method. Data analysis using Chi-square test. The result showed that 30.6% of pregnant adolescent came lately for their first visit of antenatal care (missed first trimester). Overall, the prevalence of anaemia (Hb <11 g/dl) was found to be 45.8%. There was no significant association between anaemia with consumption of iron supplementation, energy intake, iron intake, and vitamin C intake (p>0.05). However, there was a significant association between protein intake and anaemia (p<0.05). Antenatal care pratices on adolescencts pregnancy was low. Many of them had anaemia in their pregnancy. Protein intake should be increased to reduce the incidence of anemia in adolescents pregnancy.
This research was intended to asssess zinc content and zinc bioavailability from six kinds of egg... more This research was intended to asssess zinc content and zinc bioavailability from six kinds of egg processing (boiled, poached, salted, fried egg with shallow frying (A¢â‚¬A“dadarA¢â‚¬Â and A¢â‚¬A“ceplokA¢â‚¬Â), also A¢â‚¬A“pindangA¢â‚¬Â on three types of egg (local hens egg, layer egg and ducks egg). An in vitro dialysis procedure was employed to determine zinc bioavailablity. The experimental design used was complete random design with factorial experimental and further statistical analysis by Duncan Multiple Range. The results indicated that zinc bioavailabilities from three types of egg with six kinds of egg processing were ranged from 3.60 to 19.01 percents. Zinc content was ranged from 1.15 to 3.12 mg/100 g in wet basis or 2.59 to 12.22 mg/100 g in dry basis. Frying egg decreased zinc bioavailability and zinc content significantly (p<0.05). Boiling and poaching of egg increased zinc bioavailability and zinc content significantly (p<0.05). The data suggest that chickens egg (local henA¢â‚¬â„¢s and layer egg) processed by boiling and poaching increased zinc bioavailability.

The objectives of the research wasto evaluate the effect of the additions of CPO and RPO on carotene retention and physical and sensory properties of palm sugar. Pro-vitamin As enriched palm sugar were made by adding CPO or RPO and three levels of palm oil additions of 30 mL, 60 mL, 90 mL/ 10 L of toddy (palm juice). The result shows that total carotene content and carotene retention increased with the increasing addition of palm oil, but in the other hand the textures were softened. The total carotene and carotene retention of palm sugar which was addedby CPO were higher than those of palm sugar added by RPO (p<0.05). Palm sugar added by 30 mL CPO or RPO had the highest overall acceptability, and had the carotene retention of 63.38% or 25.30%, total caroten content of 3946 or 1337 μg/100 g, β-carotene content of 487 or 291 μg/100 g, respectively.
