It’s really simple and full for flavor.   ✨ There are a million in one ways to make a étouffée, but this is how I specifically make crawfish or shrimp étouffée.   ✨I make chicken and sausage étouffée slightly different.    ✨ To make a roux In general, you want to do a 1 to 1 ratio, part flour and one part oil. Or you could use butter or bacon grease, depending on what you prefer and the flavor you want in the end.  ✨ For an étouffée you want to get your roux to a deep light brown color, similar to the color of peanut butter. Make it even darker for a gumbo.   ✨Add all your fresh seasonings to cool down the roux.   ✨ For any seafood étouffée I like to use a seafood broth as well.
