Serves 4 as a side or 2 as a main 

200g large flat dried rice noodles or 400g fresh Ho Fun
220g chicken breasts, thinly sliced 
½ tsp Bicarbonate of Soda 
2 tbsp neutral oil 
4 cloves garlic, finely chopped 
150g choi sum/pak choi/ Chinese broccoli
3 eggs, whisked
4 tbsp oyster sauce 
2 tbsp soy sauce 
1 tbsp fish sauce 

To serve 
Lime wedges 
Chill flakes 


1.	For dry noodles, cover them in boiling water from the kettle and soak for 8 minutes until al dente. Drain and rinse well with cold water.
