Got these thick cut pork bellys from my local Hmart but I think you can buy a slab from Costco and cut it into thick chunks. - 3-4 lbs of pork belly slabs at least an inch thick. I didn't wash the meat but you can - 8 cups of water or however much to submerge the meat - 2 tbsp of dwenjang (Korean bean paste) - 1 tbsp brown sugar - 12 garlic cloves - 2 tbsp sliced ginger - 1 whole onion cut into chunks - 2 bay leaves - 1 tbsp coffee grind or espresso - Boil on med/high for 90mins until tender Pickled cabbage: - Make the pickle brine with 1/4 cup sugar, 1/4 vinegar, pinch salt, 1/2 cup water - Place the sliced cabbage in the brine and flip every 15mins or so to get all the sides.
