Sherri Davidson on Instagram: "HIGH PROTEIN EGG BITES
- 8 eggs
- 1 cup cottage cheese
- 1/2 cup shredded cheese
- 1 red bell pepper chopped
- 1 onion chopped
- 1.5 cups spinach chopped
- salt & pepper
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 tsp paprika 

Step 1: In a pan add 1 tbsp olive oil and toss in your chopped onion, bell pepper. Saute for a couple minutes then add in your spinach and saute until wilted. Set aside. 

Step 2: In a blender add in 8 eggs, 1 cup cottage cheese, shredded cheese and slices. Blend until smooth. 

Step 3: grease a cupcake tray with butter. Add in your veggie mixture then top it off with egg mixture. 

Step 4: bake in oven at 350 for 25 minutes. Enjoy!

This recipe for copycat Starbucks egg bites has everything you need to fuel up before or after a walk. Inexpensive, and easy to make, these are sure to be a favourite for training, or any time! Recipe details below: 

INGREDIENTS
4 whole eggs or  8 egg whites
2/3 cup cottage cheese (2% - 4%)
½ cup crumbled feta cheese or any cheese desired
Salt 
1/3 cup thinly sliced roasted bell pepper or any sauteed or roasted vegetable of choice

INSTRUCTIONS
1. Add cottage cheese, feta and eggs and salt to mini food processor – puree until smooth.
2. Add bell pepper slices to bottom of muffin tin liners in a muffin tin sprayed with vegetable oil.

Ingredients:
- 4 eggs
- 1/2 cup of cottage cheese
- 2 to 4 tablespoons of mustard (adjust to taste)
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 teaspoon fennel

Additional:
- Mini bell peppers, halved

Instructions:
1. In a mixing bowl, whisk together the eggs, cottage cheese, mustard (start with 2 tablespoons and adjust according to your taste), garlic powder, onion powder, salt, pepper, and fennel until well combined.
