I’ve never tried a bi-color plain croissant so was interested to see how the dough would go. It definitely adds a bit of a crunchy element and the glaze makes them a bit sweeter overall. Matt Adlard on Instagram: "My bank account hurts, but my Mille-Feuille is looking reallll good 😂 So I bought a puff pastry tray last week…£89 😰 but I’ve gotta say it’s been a game changer. I’ve had some success before adding a weighted tray on top but it was generally quite inconsistent - overcooked on one side, uneven weight distribution etc etc. This takes out all the guess work and I was v impressed (and I wish I was being paid to say that 🤣) It was a bit of unknown on how long to cook it so the first test was…dark…but a few more tests and I got it dialled in!
