Karen Martini's Greek-style lamb roast Karen Martini Recipes, Greek Style Lamb, Slow Roast Lamb, Classic Salad, Lamb Dishes, Summer Foods, Foods And Drinks, Savoury Recipes, Stale Bread

I love slow-roasted lamb and I cook it in many subtly varied ways. This version is inspired by the rustic cooking of the mountain villages of Greece. This is a dryish braise, or a wettish roast … either way, the result is a richly sticky and intensely flavoured dish, scented with oregano and bay, with plenty of lemon brightening and slicing through the richness. Serve with a lightly dressed bitter leaf salad, large chunks of firm feta and bread to mop up all the juices.

Stuck between seasons: 30 spring soups, stews and other comfort foods Primavera Sauce, Ricotta Cannelloni, Pasta Bakes, Cannelloni Recipes, Pasta Primavera, New Dimension, Seasonal Ingredients, Pasta Bake, Over The Top

There are few dishes more comforting than baked pasta, and this one provides all the satisfying warmth you want on a cold day, while also embracing the first tendrils of spring. This simple sugo-based dish takes on a new dimension with the salad tumbled over the top. Fresh broad beans are always the first ingredient to reset my seasonal mindset.

Chicken biryani with almonds, saffron and rosewater Rosewater Recipe, Rick Stein Recipes, Indian Comfort Food, Rick Stein, Indian Rice, Chicken Biryani, Tikka Masala, Indian Dishes, Inspired Recipes

Biryani is a classic rice dish cooked across India. Various proteins are used, including mutton, goat, fish, egg and lentils, although chicken is probably the most common – at least outside India. My version, inspired by a Rick Stein recipe, is delicately spiced but exotic, fragrant with cardamom, saffron and a hint of rosewater. Marinating the chicken for an hour or more makes such a difference to the end result and only requires a little forward planning.

Rather than being an actual Singaporean invention, Singapore noodles are thought to be more of a tribute to Singapore. The dish is said to have been devised by Chinese cooks in homage to the cultural diversity of the island republic, borrowing from a couple of cuisines – hence the curry powder. This version can be tweaked to your preference, or just adapted to use up leftover proteins. It's really simple to pull together and only takes a matter of minutes to cook. Karen Martini's Korean-style seared beef with vermicelli, beans and fungi Recipe | Good Food Karen Martini Recipes, Bean Thread Noodles, Korean Chilli Paste, Fungi Recipe, Recipe Korean, Onion Sprouts, Korean Cooking, Martini Recipe, Chilli Paste

This is my favourite stir-fry of the moment. I'm obsessed with the combination of gochugang (Korean chilli paste), beef, fungi and bean thread noodles. The noodles take on the sauce really well, and it's super-quick to bring together once prepped (which doesn't take long). Gochujang is a great way to bring detail to a dish, with heat, sweetness and savoury umami-fermented notes.
