摩卡蛋糕卷 (長烤盤約35Cm x25cm) 材料: 蛋黃麵糊: 蛋黃5顆 米糠油30g(或其他淡味液體油) 低筋粉65g、無糖可可粉10g、黑可可粉5g ( 預先過篩二次 ) 鮮奶50g 特濃即溶咖啡粉6g 熱鮮奶30g (熱鮮奶加咖啡粉拌勻) 蛋白霜: 蛋白5顆 砂糖55g 檸檬汁/白醋1/2小匙 做法: 1)米糠油加鮮奶拌勻,慢火加熱約30秒,關火,加入粉類快手拌勻。 2)加入鮮奶咖啡拌勻,蛋黃打散拌勻,分次倒入麵糊中拌勻。 3)蛋白先攪打至起泡泡,加入檸檬汁及砂糖 ( 糖要分3次加入 )打發至企身。 4)將1/3蛋白霜加入步驟 (2)拌勻,再倒回剩餘的蛋白霜中拌勻。 5)倒入長型烤盤中抹平,在桌上輕輕敲兩下,放進已預熱焗爐170度焗約20-25分鐘, 出爐後放涼,抹上咖啡巧克力鮮奶油捲起。 (烤盤上要墊牛油紙) 咖啡巧克力鮮奶油夾餡: 75%苦甜巧克力30g(濃度隨喜) 淡忌廉(動物性鮮奶油)230g 煉奶20g 特濃即溶咖啡粉3g 巧克力加約1湯匙的鮮奶油(份量中的鮮奶油), 及特濃即溶咖啡粉,隔熱水座至巧克力及咖啡粉溶化。 鮮奶油加煉奶打起,加咖啡巧克力漿拌勻備用。…
