Low sodium Beef stock or chicken stock 8 large cloves of garlic 2 medium sweet onions sliced into thick slices 2 fresh rosemary sprigs Salt and coarse black pepper to taste Preparation: Start by taking the meat out of the fridge, dry well on both sides with a kitchen paper towel. Season generously with salt and pepper on both sides. Brush both sides with any neutral oil. Sear on high in a deep cast iron pot. Make sure to sear all sides. Simply add the rosemary, onion, garlic and the second piece of seared beef. Cover the chicken stock. Taste and adjust the salt if needed. Cover with parchment paper and lid. Heat a stainless clad pan over medium-high heat before adding any oil. 2. Make sure your steaks are seasoned well and completely dry! Otherwise, you won’t get a good sear. 3. Add oil to thinly coat the pan and allow it to come up to heat. I like using avocado oil for this because of it’s high smoke point and neutral flavor. 4. Add steaks and sear for approx. 4 min on each side. It should release easily with no sticking. 5. Lower the heat and add butter, smashed garlic cloves, and rosemary sprigs. Carefully tilt your pan so that you can baste the steaks with the flavored butter. 6. Most importantly, after removing from the heat, let rest for minimum 10 min before serving. Always slice against the grain for the most tender bite. If using a thermometer: Medium Rare - 135 degrees, Medium - 145 degrees For the sauce: 1. In the same pan over medium heat, add shallots and mushrooms. Sauté for 1-2 min. 2. Add butter, red wine and beef stock. Stir to combine and let simmer for 10 min. 3. Then, add corn starch slurry, salt & lots of pepper and stir until thickened. Preparation: Prep the meat, add salt and black pepper to both sides of the meat. Place on a kitchen paper towel and let it come to room temperature before cooking. Sear on high heat until a color develops on all sides. Remove from the heat and finish searing the whole amount. Add more oil or butter if needed then the veggies/ “celery, onion and 7 of the carrots”. Cook on medium heat for 5 minutes, add the garlic.Deglaze pan with wine and let cook for a minutes before adding the tomato paste followed by the flour. Make sure you’re whisking at all times. Add the beef sock and let come back to a boil. Add the oregano and the rest of the carrots.
