Born into the family of Uoji, a long-established crucian carp sushi restaurant founded over 230 years ago in Oku-Biwako, he helped out in the family business from an early age. After graduating from university, he trained for three years at Kyoto Kitcho Arashiyama Main Branch, and in 2003 he began working with his father at his restaurant, Korian. He later became the seventh head of the family, but the restaurant was completely destroyed by a typhoon in 2018. As he worked towards rebuilding, he reexamined the significance of opening a restaurant in this location and came up with the idea of creating more original dishes. In 2021, he made a long-awaited restart.

In addition to the crucian carp sushi made from Lake Biwa crucian carp that has been fermented and aged over two winters, you can enjoy a variety of seasonal lake fish, including dace, lotus, and moroko. On this day, carp sashimi was served. When you put the juicy flesh in your mouth, it overflows with flavor, yet has a refreshing taste. As the owner says, "freshwater fish depend on the environment in which they are raised and how fresh they are," and the fact that you can enjoy even fast-moving fish that are not available in the market is a benefit of this location.

Korian is a restaurant frequented by the famous writer Shusaku Endo, who named it after his elegant name, Kori-an. After being completely destroyed by a typhoon in 2018, it was rebuilt with a sophisticated and modern atmosphere while retaining some of its former appearance. The restaurant was designed by architect Shingo Sasaki, the owner's younger brother, and won the Good Design Award in 2021 when it was rebuilt. The first floor is a dining area, and the second floor is a guest room decorated with Scandinavian furniture. Only one group per day can stay.
