Safe to say vegan options on menus are definitely more exciting now !! and I hope I’m adding to that expansion with this higher protein version that also packs so much more flavour and is an absolutely delicious easy brunch/lunch idea 🥑 Serves 2-3. For the pickled radishes: ▫️2/3 thinly sliced radishes ▫️1 tbsp vinegar ▫️1 tsp sugar ▫️1 tbsp water For the edamame/avo crush: ▫️150g shelled edamame beans ▫️1 avocado ▫️1 garlic clove ▫️1 tbsp nutritional yeast ▫️1 tbsp tahini ▫️1 small handful coriander ▫️Juice of 1/2 lime ▫️Salt and pepper ▫️Sourdough ▫️Cucumber, ribboned ▫️Crunchy seeds (I buy these in a pack) ▫️ Edamame Beans, Lime Salt, Pickled Radishes, Smashed Avocado, Easy Brunch, Radishes, Nutritional Yeast, Stuffed Shells, Vegan Options

1 large cucumber
1/2 cup edamame
1 tbsp soy sauce
1 tbsp rice vinegar
1 tbsp maple syrup
1 clove of garlic
1 tbsp toasted sesame seeds

1. Bash the cucumber until it opens at the sides. This will help the flavour seep through. Then chop it into bite sized pieces.
