White Toast
PULLMAN

Bahan-bahan :
FERM 3>40’
Bread flour 750 gr
Yeast 15 gr
Sugar 60 gr OPEN TOP
Milk powder 30 gr 1800 C
Ice water 450 ml
30 MIN
Salt 15 gr
Shortening 60 gr

Cara membuat :

1) Rise all ingredients except salt and shortening by speed 1


2) Pour in ice water, change to speed 2
3) Add salt and shortening
4) Continue mixing to final develop stage
5) Take cut the dough and resting for 40 min
6) Degassing the dough, scale to appropriate weigh for Pullman and open top
mould
7) Resting for 20 min
8) Degassing and moulding
9) Transfer to the mould
10)Put inside proofing for 40 min
11)Bake in the oven
Banana Cake

Bahan-bahan :
Sugar (granulated) 150 gr
Butter (unsalted) 150 gr
Egg yolk 4 pcs
Banana (Ambon) 3 pcs
Medium flour 225 gr
Baking powder 10 gr
Baking soda 5 gr
Egg white 4 pcs
Sugar granulated 50 gr

Cara membuat :
1) Cream sugar dan butter
2) Tambahkan egg yolk satu per satu
3) Tambahkan banana ambon
4) Tambahkan medium flour, baking powder,baking soda
5) Buat meringue (egg white + sugar granulated)
6) Fold dalam adonan
Molten Chocolate cake

#Ganache filling :
Chocolate dark couverture 125 gr
Fresh cream 125 gr
Cara membuatnya :
1) Chocolate dark dipotong kecil-kecil lalu dilelehkan tapi tidak terlalu panas
2) Lalu masukkan fresh cream yang telah dipanaskan, aduk rata dengan balloon
white lalu dinginkan

#Cake :
Butter unsalted 130 gr
Dark chocolate couverture 130 gr
Sugar granulated 25 gr
Egg 3 pc
Egg yolk 1 pc
Medium flour 55 gr
Baking powder 2 gr
Cocoa powder 35 gr
Cara membuatnya :
1) Lelehkan butter dan chocolate dark (bain marie)
2) Aduk sugar,egg whole, dan egg yolk dengan mixer (speed 3) hingga
mengembang
3) Masukkan lelehan butter dan chocolate, aduk rata
4) Tambahkan flour, baking powder, cocoa powder, ffold in hingga merata
5) Tuang dalam baking cup, isi dengan [ganache], tutup kembali dengan [batter]
6) Panggang dalam oven
Pizza

Bahan-bahan :
Hard flour 250 gr
Yeast 5 gr
Bread improver 3 gr
Salad oil 25 gr
Ice water 135 gr
Salt 5 gr
Cara pembuatan :
1) Campurkan semua bahan kering, kecuali garam
2) Tambahkan salad oil, aduk
3) Tambahkan air es, knead hingga clear stage, kemudian tambahkan garam
4) Pipihkan, masukkan dalam proofing
5) Panggang dalam oven setelah diberi concasse dan topping

#Tomato concasse :
Bahan :
Tomat segar 2 pc
Saus tomat 75 gr
Tomat paste 50 gr
Chopped garlic 3 pc
Chopped onion 1 pc
Cooking oil For sautee
Oregano, Basil, Thyme, Pepper, Salt, Sugar Optional
Cara membuat :
1) Blanch tomat, buang kulit dan biji, chop
2) Sautee garlic dan onion
3) Tambahkan tomat (chopped), saus tomat, tomato paste, air (secukupnya)
4) Tambahkan seasoning, masak hingga matang. Lalu pisahkan
Soft Roll

Bahan-bahan :
Hard flour 300 gr
Medium flour 200 gr
Yeast 10 gr
Sugar granulated 50 gr
Milk powder 20 gr
Egg 1 pcs
Ice water 250 ml
Salt 7,5 gr
Butter unsalted 50 gr
Bread improver 5 gr

Cara membuat :
1) Campurkan semua bahan kering kecuali garam
2) Tambahkan telur, aduk
3) Tuang air es, aduk hingga halus
4) Tambahkan garam dan mentega, aduk hingga halus
5) Fermentasi 1 (diamkan adonan sampai mengembang selama 40 menit)
6) Kempeskan timbang seberat 35 gr bulatkan
7) Fermantasi 2 (diamkan adonan sampai mengembang 20 menit)
8) Kempeskan kembali adonan
9) Bentuk bulat taruh diatas tray yang sudah dipoles margarine
10)Fermentasi 3 (diamkan adonan selama 40 menit)
11)Pada permukaan atas adonan, oleskan egg whole wash
12)Panggang dalam suhu 180*C-190*C selama 12 menit

Sugar Granulated 65 gr
Cake Stabilizer 7,5 gr
Soft Flour 50 gr
Milk Powder 10 gr

Unsalted Butter 15 gr

Cara membuat :
1. Sicve flour, baking powder, milk powder together
2. Melt butter and margarine
3. Line square cake tin (30x30x3) with baking sheet, grease
4. Mix egg, egg yolk, sugar, cake stabilizer until foamy and thick
5. Fold in flour slowly
6. Pour in melted butter, fold in carefully
7. Pour in baking tin
8. Bake in the oven
9. Let it cool

1. Prepare all ingresdients

8. FII (20Min)
9. Degassing, rounding, filling transfer to reused tray

2. Kocok telur dan gula hingga mengembang
3. Ayak flour dan cocoa powder
4. Tuang ke dalam Loyang dialas dengan baking paper

Filling
Fresh Milk 200 ml
Fresh cream 200 ml

Chicken powder 5 gr
Salt and pepper 5 gr
Onion 100 gr
Garlic 50 gr
Smoked Ham 5 pcs
Beef Sausage 5 pcs
Spinach 2 ikat

Cara membuat :
1. Campurkan bahan dough, aduk hingga kalis
2. Pipihkan dough dengan rolling pin
3. Transfer dough ke pie pan, potong pinggiran yang berlebih
4. Saute garlic dan onion hingga wangi, masukkan sliced sausage dan sliced ham,
tumis sebentar, beri seasoning, pinggirkan
5. Campurkan telur, fresh milk, dan fresh cream, aduk rata. Tambahkan
chicken powder dan beri seasoning, aduk rata.
6. Blanch spinach, kemudian chop kasar
7. Taburi pie crust dengan sautee sausage dan ham, chop spinach, kemudian
tuang campuran telur, fresh milk, dan fresh cream
8. Taburi keju cheddar parut diatasnya
9. Panggang di oven dengan suhu 180*C sekitar 30 menit

200gr Margarin
100gr Icing Sugar
1pcs Egg
300gr medium flour

Cara membuat:
1. Diaduk pakai pedal speed 2 di aduk sampai light yellow (creamy method)
2. Tambahkan telur bertahap,aduk rata
3. Masukan tepung lalu turunkan kesempatan mixer speed 1
4. Setelah selesai dipipihkan bungkus ke dengan plastic wrap lalu dinginkan
chiller jangan di tumpuk selama 1 jam

Cara membuat:
1. Apel dikupas lalu potong cube masukan ke dalam panic bersama dengan
margarin,sugar & lemon juice
2. Setelah setengah matang tambahkan raisin & cinnamon
3. Larutkan maizena dengan air/thickening lalu masukkan ke dalam pan sambal
di aduk
