DISCUSSION

The experiment Ranking test was to study about the level measurement in sensory evaluation of
food and to identify collect primary data from consumer panelist for decision making. Ranking
used to determine how several samples differ on the basis of a single characteristic [ CITATION
Sci16 \l 1033 ]. Panelists were presented all samples with code number and are asked to rank. The
panelist were asked to rank the coded samples according to there preference.

For ranking test, the assessors need to rinse their mouth by using distilled water before
tasting each samples and begin to test it from left to right. The assessors may re-taste the sample
as often as they need. If more than two samples are evaluated, a preference ranking test may be
completed. Usually three to five samples are the most that can be efficiently ranked by a
consumer. This test asks the consumer to order the samples based on preference, with a ranking
of “1” meaning most preferred.

Based on the result obtained from the ranking test, the assessors were given 4 samples
differently coded and adequately randomized, and were asked to rank them in the range of from
the sweetest to less sweet based on their order of preference. Ranking test were held just to indicate
the direction of the preference for the product and not give the indication of the size of the preference
between successive products [ CITATION Spa17 \l 1033 ]. From the results, it can be observed that
all the assessors managed to rank the samples correctly, starting from the sweet one to the plain
one. The level of sweetness was able to be determined by the panelist was because the sample
might be added certain carrier such as sugar, citric acid or any other ingredients that could make
the panelist to be able to judge the sample based on their preferences of the level of sweetness
itself.

Ranking test has its advantages and disadvantages in sensory evaluation. A multiple‐
samples ranking test is a quick, simple, and useful tool to assess differences in preference or
sensory attribute intensity among multiple products [ CITATION Bri151 \l 1033 ]. In this test, each
panelist evaluates and ranks a complete set of samples once, generating one vector of multiple
dependent data. Besides, ranking is able to remove any effect of judge severity, while permitting
judge ranking patterns to be compared for quality control meanwhile as for its disadvantages, it
is difficult to combine data from different rankings, and the information contained in the data is
limited. Furthermore, it is also troublesome to reanalyze rankings in order to investigate a
different hypothesis.
