CHAPTER II

REVIEW OF RELATED LITERATURE AND STUDIES

One of the barriers in cooking was lack of knowledge about how to cook. The involvement of different
knowledge in cooking had been part of difficulty in improving culinary skill and practices. The barriers should be
take aside and mentally play how cooking would be enjoyable without considering the problems in individual skills
in cooking. (Soliah, Walter, & Antosh, 2009)
The types of skills involved in today’s cooking are known as mechanical, technical, perceptual, conceptual,
organizational, and academic. These skills are difficult to define and are significantly complex, reducing cooking
skills to the ability to do tasks such as baking, broiling, poaching, and stir-frying is an over simplification of
activities involved in planning, organizing, and preparing a meal. (Short, 2009)
The socio‐economic status and education are associated with the sources of people’s knowledge about
cooking. What emerges is a population unsure of specific cooking techniques and lacking in confidence to apply
techniques and cook certain foods. (Dixon and Carr-Hill, 2010)
The most common potential challenges identified related to the development of successful strategies or
interventions to enhance cooking and food preparation skills among children, students and adults include time,
individual food choice and the diminished value placed on 'cooking from scratch' or traditional cooking skills.
(Dowler Gray, 2010)
Low self-efficacy and self-perceived inadequate cooking and food preparation skills have been identified
as barriers to food choice within, potentially resulting in a greater reliance on pre-prepared or convenience foods,
reduced variety in food choice and consumption and the atrophy of cooking and food preparation skills.
(Broughton M.A., 2011)
It is our approach to cooking that influences what and how we cook, ‘approach to cooking’ being made up
of the attitudes and beliefs about cooking that we share with others, our personal identifications as people who
cook and our confidence in cooking and the degree to which we find it an effort, arising in part from our tacit,
unseen skills and academic knowledge. (Shapiro, 2011)
Cooking skills involve knowledge of ingredients as well as equipment, the skills and techniques also ability
to plan and organize food preparation within time constraints. Not to forget the classic methods of cooking are far
better as well as healthier as compare to new methods like microwave. (Moira Dean, 2014)
Cooking enjoyment was the most important predictor for cooking skills, especially for men. Women had
higher cooking skills in all age groups. The cooking confidence is also important in the food skills confidence that
measure and have been shown to have a very satisfactory reliability, validity and are consistent over time. (Fiona
Lavelle et. al., 2017)
Improving cooking skills can be discovered by the person in simple ways such as, tuning into cooking
shows. There are a couple of networks dedicated just to food. The chefs have their own shows in their particular
niche. While many of them are celebrities, they definitely know their craft and know how to connect with their
audience. Browse the programs, watch a few and see how you can identify with their style of cooking. (Pandora
Dawn, 2018)
The category related to individuals involved dimensions such as confidence, attitudes, behavior, and
individual knowledge used to prepare foods. The historical definitions of cooking allowed us to clarify the concept
of cooking skills. Considering the global context of valuing and recovering cooking for the promotion of healthy
eating, this review can contribute to the scientific discussion about the concept of cooking skills. (Manuela Mika,
2018)

SYNTHESIS
Cooking is a valuable life skill which is often linked with improved food practices. However, its concept
should also be considered which includes confidence, attitudes, behavior and knowledge how to value cooking.
Cooking confidence and knowledge are fundamental requirements to the development of individual cooking skills.
Cooking must be acknowledged with these cooking skills that involved planning, organizing, and preparing a
meal. Some of the barriers in cooking was lack of knowledge about how to cook, lack of confidence to apply
techniques and cook certain foods and lack of cooking confidence that measures very satisfactory reliability,
validity and are consistent over time. Cooking enjoyment can help these barriers to be avoided. Cooking skills
involve knowledge of ingredients as well as equipment, the skills and techniques also ability to plan and organize
food within time constraints are need to improve for individual development. Our approach to cooking which are
attitudes and beliefs influence us how to cook, it is in our personal identifications how people cook. Cooking skills
have been increasingly used on their own and as part of other initiatives as a preventive measure to address
one’s ability in cooking. Cooking skills have been referred to as the ability to perform tasks related to the
preparation of food, which requires preliminary procedures. Cooking skills may help people to meet not only
nutrition but also individual development guidelines. They allow people to make new and developed food choices.
It is, therefore, important to teach children and teenagers not only ourselves how to cook and to encourage them
to develop their cooking skills. All cooking and food skills include most significant things, these are knowledge
about food, nutrition, food safety, ingredient substitution, proper manners and behavior, organizing and preparing
of budget for cooking preparation. It is important to enhance one’s cooking skills because it makes someone self-
sufficient, creative, boosts his social skills and be active in his individual life. Cooking must be proper, especially,
when applying etiquettes which will have respect and behave in the kitchen. Being consistent in all time is one
part of the proper manners in cooking, for example, someone is calm before cooking started and that serenity
should always stay should not panic even if problems in cooking appear. Cooking skills must have been enough
for good and for development as an individual.
