SOURDOUGH

3/4 C. warm water 2 2/3 C. bread flour
1 C. sourdough starter 1 1/2 tsp active dry yeast
1 1/2 tsp salt
Directions
1. In a bread machine pan, place all the ingredients in order as suggested by the manual.
2. Select White Bread cycle and press the Start button.

Pastoral Prep Time: 5 mins
Ingredients
3 1/4 C. bread flour 2 tbsp butter
1/2 C. instant mashed potato flakes 1 1/4 C. water
1 tbsp white sugar 2 tsp instant yeast
1 1/2 tsp salt
Directions
1. In a bread machine pan, add all the ingredients in order as suggested by the manual.
2. Select the White Bread cycle and press the Start button.
Ingredients
1 C. water 1 tbsp dried rosemary
3 tbsp olive oil 2 1/2 C. bread flour
1 1/2 tsp white sugar 1 1/2 tsp active dry yeast
1 1/2 tsp salt
1/4 tsp Italian seasoning
1/4 tsp ground black pepper

1. In a bread machine pan, add all the ingredients in order as suggested by the manual.
2. Select the White Bread cycle and press the Start button.

2. Select the Basic Bread cycle and then press Start button.
3. Remove the bread from bread machine and keep onto a wire rack to cool before slicing.
4. Cut into desired sized slices and enjoy.
Ingredients
4 C. unbleached all-purpose flour 1 egg
1 tbsp light brown sugar 1 tbsp water
1 1/3 C. warm water 2 tbsp cornmeal
1 1/2 tsp salt
1 1/2 tsp olive oil
1 (.25 oz.) package active dry yeast
Directions
1. In a bread machine pan, place the flour, brown sugar, warm water, salt, olive oil and yeast
in order as suggested by the manual.
2. Select the Dough cycle and press the Start button.
3. After the completion of cycle, transfer the dough onto a lightly floured surface and knead
for some time.
4. Divide the dough into 2 portions and shape each into a loaf.
5. Sprinkle a cutting board with cornmeal generously.
6. Place the loaves over cornmeal onto cutting board, seam side down.
7. With a damp kitchen towel, cover the dough loaves and keep aside for about 40 minutes.
8. Meanwhile, set your oven to 375 degrees F.
9. For the egg wash: in a bowl, add 1 tbsp of the water and egg and beat well.
10. Coat the loaves with the egg wash evenly.
11. With a sharp knife, make a long cut in the middle of each loaf.
12. In the bottom of a baking sheet, arrange the loaves.
13. Place in the oven for about 30-35 minutes.
14. Remove from the oven and enjoy.

2 tbsp dry milk powder 1 tsp dried oregano
2 tbsp white sugar 1 tbsp active dry yeast
1 1/2 tsp salt
2 tbsp butter, softened
3 tbsp grated Parmesan cheese
1 1/2 tsp dried marjoram
Directions
1. In a bread machine pan, add all the ingredients in order as suggested by the manual.
2. Select the Basic or White Bread cycle and press the Start button.

Ingredients
1 C. milk 1 C. packed brown sugar
1 egg, beaten 2 tsp ground cinnamon
4 tbsp melted butter 1/4 C. chopped walnuts
4 tbsp water 1/4 C. raisins
1/2 (3.5 oz.) package instant vanilla 1 tsp milk
pudding mix 1 1/2 C. confectioners' sugar
4 C. bread flour 4 tbsp butter, softened
1 tbsp white sugar 1 tsp vanilla extract
1/2 tsp salt
2 1/4 tsp bread machine yeast
1/2 C. butter, softened
Directions
1. Place the milk, egg, melted butter, water, vanilla pudding mix, bread flour, sugar, salt and
yeast in the pan of bread machine in order as suggested by the manual
2. Select the Dough cycle and press the Start button.
3. After the completion of cycle, place the dough onto a lightly floured surface and with
your hands, knead for about 3-5 minutes.
4. Then, with rolling pin, roll the dough into a large rectangle.
5. In a bowl, add 1/2 C. of the cinnamon, softened butter and brown sugar and mix until
well combined.
6. Place the butter mixture over dough rectangle evenly and top with the raisins and
walnuts.
7. Carefully, roll the dough into a log shape and with your fingers, pinch to seal the seams.
8. With a sharp knife, cut the dough log into 1/2-1-inch slices.
Mock Cinnabons 23
9. In the bottom of a greased 9x13-inch baking dish, place the dough slices.
10. Keep the baking dish aside in a warm place until doubled in volume.
11. Set your oven to 350 degrees F.
12. Place the baking dish in the oven and cook for about 15-20 minutes.
13. Remove from the oven and keep aside to cool slightly.
14. Meanwhile, for the frosting: in a small bowl, add 4 tbsp of the butter, confectioners’ sugar,
milk and vanilla and mix until well combined.
15. Coat the warm cinnamon rolls with frosting and enjoy.

Adirondack Prep Time: 30 mins
Ingredients
1 C. warm water 3 tbsp white sugar
1 1/2 tsp salt 1 tbsp cornmeal
2 tbsp white sugar 1 egg white
3 C. bread flour 3 tbsp poppy seeds
2 1/4 tsp active dry yeast
3 quarts boiling water
Directions
1. In a bread machine pan, add the water, salt, sugar, flour and yeast in order as suggested
by the manual.
2. Select the Dough cycle and press the Start button
3. After the completion of cycle, transfer the dough onto a lightly floured surface for some
time.
4. Make 9 equal sized small bald from the dough and with your hands, flatten each one.
5. With a clean kitchen cloth, cover the bagels and keep aside for about 10 minutes.
6. Set your oven to 375 degrees F and sprinkle the cornmeal in the bottom of an ungreased
baking sheet.
7. In the pan of the boiling water, gentry place the bagels and cook for about 30 seconds
per side.
8. With a slotted spoon, transfer the bagels onto a clean towel-lined plate to drain.
9. In the bottom of the prepared baking sheet, place the boiled bagels.
10. Coat the top of each bagel with the egg white and then, sprinkle with the poppy seeds.
11. Place in the oven for about 20-25 minutes.
Adirondack Bagels 25
GRANDMA’S
Focaccia
Prep Time: 5 mins
Total Time: 3 hrs
Ingredients
1 C. lukewarm water 1 1/2 tsp active dry yeast
2 tbsp olive oil 2 tbsp olive oil
1/2 tsp salt 1 1/2 tsp chopped rosemary
2 tsp chopped garlic
1 tbsp chopped rosemary
3 C. bread flour
Directions
1. In a bread machine pan, add the water, 2 tbsp of the olive oil, salt, garlic, 1 tbsp of the
rosemary, bread flour and yeast in order as suggested by the manual.
2. Select the Dough cycle and press the Start button.
3. After the completion of cycle, place the dough in the bottom of a 9x13-inch baking dish
and with your fingers, press to smooth the surface.
4. Spread the remaining oil on top of the dough evenly and then, sprinkle with the remaining
rosemary.
5. Set your oven to 400 degrees F.
6. With a plastic wrap, wrap the dough during the preheating of oven.
7. Place the focaccia in the oven for about 20-25 minutes.
8. Remove from the oven and keep onto a wire rack to cool for about 5 minutes.
9. Enjoy warm.
26 Grandma’s Focaccia
Eastern European Prep Time: 30 mins
Ingredients
1 1/4 C. warm water 3 7/8 C. bread flour
1/2 C. butter, softened 2 tsp active dry yeast
1 egg 1 (12 oz.) can cherry pie filling
1 egg yolk 1 (12 oz.) can poppy seed filling
1/3 C. milk powder 1/4 C. butter, melted
1/4 C. instant mashed potato flakes
1/4 C. white sugar
1 tsp salt
Directions
1. In a bread machine pan, place the water, softened butter, egg, egg yolk, milk powder,
potato flakes, sugar, salt, flour and yeast in order as suggested by the manual.
2. Select the Dough cycle and press the Start button.
3. After the completion of cycle, place the dough onto a lightly floured surface. Make small
equal sized balls from the dough and arrange onto a lightly greased baking sheet in a
single layer about 2-inch apart. With a plastic wrap, wrap the baking sheet and keep
aside for about 1 hour.
4. Remove the plastic wrap and with your fingers, flatten each ball slightly. Now, with your
thumb, make a small well in the middle of each ball. Place about 1 tbsp of the filling in the
well of each dough ball. With a plastic wrap, cover the baking sheet and keep aside for
about 25-30 minutes. Meanwhile, set your oven to 375 degrees F.
5. Place the buns in the oven for about 13-15 minutes.
6. Remove from the oven and coat each bun with the melted butter.
7. Place the baking sheet of buns onto a wire rack to cool.
8. Enjoy.

28 2-Step Challah
Chicago Prep Time: 10 mins
Ingredients
1 C. flat beer 2 1/2 C. all-purpose flour
2 tbsp butter 2 1/4 tsp yeast
2 tbsp sugar
1 tsp salt
Directions
1. In the pan of the bread machine, place the beer, butter, sugar, salt, flour, and yeast in
order as suggested by the manual.
2. Set your oven to 400 degrees F.
3. Select the Dough cycle and press Start button.
4. After the completion of cycle, transfer the dough onto a lightly floured surface.
5. Place the dough onto a lightly greased pizza pan and press to fit.
6. Coat the pizza dough with the oil slightly and keep aside, covered for about 15 minutes.
7. Spread the pizza sauce over pizza dough and top with your desired condiments.
8. Place in the oven for about 24 minutes.
9. Enjoy warm.
Ingredients
1/2 C. warm water 3 3/4 C. all-purpose flour
1/2 C. warm milk 1 (.25 oz.) package active dry yeast
1 egg 1/4 C. butter, softened
1/3 C. butter, softened
1/3 C. white sugar
1 tsp salt
Directions
1. In a bread machine pan, place the water, milk, egg, 1/3 C. butter, sugar, salt, flour and yeast
in order as suggested by the manual.
2. Select the Dough/Knead and First Rise Cycle.
3. Press the Start button.
4. After the completion of cycle, place the dough onto a lightly floured surface.
5. Cut the dough in 2 equal sized portions and roll each one into a 12-inch circle.
6. Place 1/4 C. of the softened butter over both dough circles evenly.
7. With a pizza cutter, cut each dough circle into 8 equal sized wedges.
8. With your floured fingertips, roll each wedge up starting at the widest end.
9. In the bottom of an ungreased baking sheet, arrange the buns, pointed tip tucked under.
10. With a kitchen towel, cover the buns and place in a warm area for about 1 hour.
11. Meanwhile, set your oven to 400 degrees F.
12. Place the buns in the oven for about 10-15 minutes.
13. Enjoy hot.
Ingredients
1 C. warm milk 2 1/2 tbsp ground cinnamon

4 1/2 C. bread flour 1/4 C. butter, softened

1 C. brown sugar, packed
Directions
1. In a bread machine pan, place all the ingredients in order as suggested by the manual.
2. Select the Dough cycle and press the Start button.
3. After the completion of cycle, place the dough onto a lightly floured surface. With a
plastic wrap, wrap the dough for about 10-12 minutes.
4. Meanwhile, add the cinnamon and brown sugar in a bowl and mix well.
5. Now, roll the dough into a 16x21-inch rectangle.
6. Coat the dough rectangle with 1/3 C. of the butter evenly and top with the cinnamon
mixture. With a floured rolling pin, roll the dough rectangle into an even thickness.
7. Make 12 equal sized rolls from the dough. In the bottom of a lightly greased 9x13-inch
baking dish, arrange the rolls. With a plastic wrap, cover the baking dish and keep aside
for about 30 minutes.
8. Meanwhile, set your oven to 400 degrees.Place in the oven for about 15 minutes.
9. Remove from the oven and keep aside to cool slightly. Meanwhile, for the frosting: in a
bowl, add the 1/4 C. of the butter, cream cheese, confectioners' sugar, salt and vanilla
extract and beat until well combined.
10. Coat the warm rolls with the frosting and enjoy.
Autumn Solstice Cinnamon Buns 33
BREAD MACHINE
Baguettes
Prep Time: 15 mins
Total Time: 1 hr 50 mins
Ingredients
1 C. water 1 egg yolk
2 1/2 C. bread flour 1 tbsp water
1 tbsp white sugar
1 tsp salt
1 1/2 tsp bread machine yeast
Directions
1. In a bread machine pan, place 1 C. of the water, bread flour, sugar, salt and yeast in order
as suggested by the manual.
2. Select the Dough cycle and press the Start button.
3. After the completion of cycle, transfer the dough into an oiled bowl and turn the dough
well. With a plastic wrap, cover the bowl and keep aside in warm area for about 30
minutes.
4. With your hands, punch down the dough.
5. Place the dough onto a lightly floured surface and roll into a 16x12-inch rectangle. Cut
each dough rectangle in 2 (8x12-inch) rectangles. From the widest end, roll each dough
half roll into a thin cylinder tightly. In the bottom of a greased baking sheet arrange the
buns in a single layer about 3-inch apart. Make one long cut on top of each loaf.
6. With a plastic wrap, cover the dough loaves and keep aside in warm area for about 30-
40 minutes. Meanwhile, set your oven to 375 degrees F.
7. For the egg wash: in a small bowl, add 1 tbsp of the water and egg yolk and beat well.
Coat the top of each loaf with the egg wash.
8. Place in the oven for about 20-25 minutes.
9. Remove from the oven and keep onto a wire rack to cool completely. Cut into desired
sized slices and enjoy.

for about 20 minutes.
7. Remove from the oven and immediately place
the rolls onto a wire rack to cool completely.
8. For the glaze: in a bowl, add the milk,
confectioners' sugar and vanilla extract and
beat until well combined. In a piping bag, add
the glaze and pipe onto the rolls.

1 1/8 C. water 1 1/2 tbsp shortening
3 C. whole wheat flour 1 1/2 tsp active dry yeast

1/3 C. honey
1 tbsp dry milk powder
Directions
1. In the pan of bread machine, add all the ingredients in order as suggested by the manual.
2. Select the Whole Wheat cycle and press the Start button.

Sweet Rolled Prep Time: 5 mins
Ingredients
1 1/4 C. water 2 tbsp brown sugar
2 tbsp margarine 1 1/2 tsp active dry yeast

3 C. all-purpose flour
1/2 C. rolled oats
Directions
1. In the pan of a bread machine, place all the ingredients in order as suggested by the
manual.
2. Select the Regular Light cycle and press the Start button.
Ingredients
3 C. bread flour 1 (.25 oz.) package active dry yeast
3 tbsp white sugar 1 egg white
1 tsp salt 2 tbsp water
1/4 C. dry milk powder
1 C. warm water
2 tbsp butter, softened
Directions
1. In a bread machine pan, add the flour, sugar, salt, milk powder, water, butter and yeast in
order as suggested by the manual.
2. Select the Dough cycle and press the Start button.
3. After the completion of cycle, transfer the dough onto a lightly floured surface and punch

5. In the bottom of 2 lightly greased baking sheets, arrange the dough balls.

3. Switch off the bread machine on the starting of second cycle of kneading.

New Jersey Prep Time: 30 mins
Ingredients
1 1/4 C. warm milk 1 C. whole wheat flour

3 1/2 C. high-gluten bread flour 1 tbsp sesame seeds, toasted
1 tbsp active dry yeast
1 tsp dried oregano
Directions
1. In the pan of a bread machine, add the warm water, sugar, 1 tsp salt, flour and yeast in
order as suggested by the manual.
2. Select the Dough cycle and press the Start button.
3. After the beep rings, add the herbs.
4. After the completion of cycle, transfer the dough onto a lightly floured surface.
5. Make an oval loaf from the dough.
6. In the bottom of a greased baking sheet, arrange the loaf.
7. With a lightly wet kitchen towel, cover the dough and keep in warm area for about 1
hour.
8. Meanwhile, set your oven to 400 degrees.
9. In a small bowl, add the salt and 2 tbsp of the water and mix well.
10. Make 3 small cuts on top of bread.
11. Now, coat the whole bared loaf with the salted water and spread the sesame seeds on top
evenly.
12. Place in the oven for about 20-25 minutes.
13. Transfer the bread onto a wire rack to cool for about 10 minutes before slicing. Cut into
desired sized slices and enjoy.
