CHAPTER 11

PEST CONTROL
Pest: a pest is simply an animal whose interest in some way conflicts with the interest of man.
These are found wherever man lives and works.

Objective: To minimize the number of pests, damage inconvenience they cause and eliminate
disease they transmit.
The foundation of successful pest control lies in a sound knowledge of their habits, needs, life
history and the breeding of pest.

Pest control is done in 4 ways


1. Physical control
. Design , layout and construction
1. Traps
. Chemical control
. Fumigation
1. Insecticides, pesticides
. Maintenance
. Repetitive constant cleaning
1. Maintaining the environment
. Education / Habit
. Knowledge of pest, where they survive
1. knowledge of how to eradicate

Implementation of pest control

1. Pests destroy fruits, vegetables and also leads to food contamination


2. Cracks should be sealed so that they do not hide in them
3. Dustbins should be cleaned well daily and always be closed with a lid
4. Kitchen should be cleaned thoroughly after all work has been completed as the pest feed on tit-
bits of food lying around
5. All doors and windows should be kept closed after work so that pests do not enter.
6. There should be ample light at night as darkness attracts pests.
7. use of spray helps to keep away flies
8. For rodents one should keep traps
9. precautions should be taken to keep food totally covered
10. Basins , sewage pipes should be cleaned regularly so that pests do not enter through drains
11. Periodically pesticides should be used to keep under control and discard their eggs
12. Periodic inspection of food service area should be done and utmost care be taken to keep it
clean

CONTROL
Flies
To keep out flies
· the doors and windows should be screened other openings should be protected;
· toilets should be thoroughly cleaned, ventilated.
· Garbage bags must be always covered.
· On entrance of the establishment electric insect killers should be provided (insectorators)

Cockroaches
· Keep Naphthalene balls in corners
· Have damp areas eliminated- drippings from drains, leaks from pipes.
· Have premises cleaned every night for left out food.
· Inspecting kitchens, storage rooms, garbage rooms for any signs of cockroaches or their
dropping
· Inspecting incoming boxes of food for presence of cockroaches or cockroaches infested goods.
· Hiring a professional pest control for regular chemical control.

Rodents
· All openings to outside should be protected against the entrance of rats and mice, therefore
service of professional is recommended
· Rodents may squeeze through very small opening. A small crack ½ “wide can admit an adult
mouse or young rat. Doors should be self closing.
· Inspecting the premises every night.
· Inspecting delivery of big bags of groceries.
· Clean up spills in the kitchen, pantry, dining area and storeroom immediately and thoroughly.
Lizards
Controlling lizards is easy.
· The first thing that will help is to reduce lizard food that is insects and other pests. This can be
done by doing a little pest control around the house.
· .Next apply lizard repellents. The best lizard repellent is made from all natural, low impact
actives but lizards dislike garlic, and other plant oils. It comes in both granules and spray.
Lizards really hate the odor and will stay away from where it’s applied.
· Lastly, set out some roach scented LIZARD GLUE TRAPS. These are ideal for inside the home
and can be placed along baseboards, under furniture, on countertops or any place where you
have seen lizards foraging.

Ants
Ant infestations are not easy to control and different strategies should be used depending on nest
location and food preferences of the ants. Ants can be controlled with a combination of good
sanitation, removing pheromone trails, chalking entry points and eliminating active nests.
Insecticide sprays and baits can be used to kill foraging ants and destroy nests, but strategies
designed to prevent further infestations should be used in conjunction with chemical treatment
[Pheromones is a secreted or excreted chemical factor that triggers a social response in members of
the same species. Pheromones are chemicals capable of acting outside the body of the secreting
individual to impact the behavior of the receiving individual. There are alarm pheromones, food trail
pheromones.]

CHAPTER 12

FOOD SANITATION
It is a series of protocols which are designed to prevent contamination of food, keeping it safe to
eat. There are various laws concerning food sanitation along with list of recommendations from
public health agencies.

From the moment the food is harvested to the time it is eaten, it is vulnerable to cross
contamination with bacteria and other substances which could be harmful. The key to food
sanitation is keeping food safe and clean with all handlers observing personal hygiene to avoid
introducing harmful elements to food and complying with food sanitation recommendations
concerning safe holding temperature of food, safe cooking temperatures, sterilization of cutting
board etc. Outbreaks of foodborne illness due to poor food sanitation are a common problem in
many regions of the world. Failure to process food properly has led to sickness from foods like
spinach meat etc. Outbreaks to diseases can often be traced to restaurants, roadsides food stalls and
many other locations where food is sold or traded.

Water Supply

Water to be used in kitchen for any purpose, washing or drinking should be potable and free from
contaminants. Assurance of drinking water is foundation for the prevention and control of water
borne diseases. Water should also be treated for heavy metals as they could be injurious to health.
Though boiling is the best method to ensure safety against biological contamination i.e, bacteria,
virus etc, it does not prevent against heavy metal contamination and other suspended particles. A
combination of methods needs to be used for complete purification of water.
