Cheesy Bacon Potato Bites

(Appetizer) Ingredients
Ingredients:
 1 cup Frozen Waffle Fries
 1 ounce cream cheese, softened
 1/2 cup sharp cheddar cheese, shredded
 2-3 slices center-cut bacon, cooked

Procedures:
1. Preheat oven at 400 degrees, and lay frozen waffle fries in a single layer. Bake as
directed on package.
2. Combine cream cheese and shredded cheddar until well combined. If you need to
add more of either cheese, you can do so. This is a very forgiving recipe.
3. Once waffle fries are cooked, remove them and place a dollop of cheese mixture on
top of fries. Return to oven at 350 degrees, for 3-5 minutes or until cheese is melted.
4. Remove fries from oven and place a slice of bacon on top of the cheese so it
adheres to the melted cheese.
5. Serve warm, with sour cream on the side if desired.

Ham & Mixed Vegetable Salad
(Salad)
Ingredients
 1/2 lb. ham steak (1 inch thick), diced
 2 tablespoons Best Foods Mayonnaise
 7.45 oz. mixed vegetables (drained)
 2 tablespoons finely chopped onion
 1/2 jalapeno pepper, seeded and finely chopped
 1.5 tablespoons chopped fresh cilantro
 1/2 teaspoon grated lime peel
 Lettuce leaves (optional)

Procedures:
1. In 12-inch nonstick skillet, cook ham over medium-high heat, turning once, 4 minutes or
until heated through. Cut ham into 1/2-inch chunks.
2. In large bowl, combine all ingredients except lettuce. Serve over lettuce.

Ham Chive Cream Cheese Canapés

Ingredients:
 4 oz thinly sliced ham
 4 oz cream cheese (Philadelphia recommended)
 1 bunch chives, finely minced (a few set aside for
garnish)
 5 whole grape tomatoes, sliced (for garnish)

Procedures:

1. Pull out the cream cheese and let it come to room temperature. Alternatively, get
whipped cream cheese for easier spreading straight out of the fridge.
2. Pull out the ham and separate the slices for easy assembly. Set aside.
3. Pull out the chives. Reserve a few chives for garnish. Finely chop the remaining
chives. In a medium bowl, mix the cream cheese and chopped chives. Set aside.
4. Slice 10 grape tomatoes into slices, making little discs that will top the canapés.
Set aside.
5. Lay out a slice of ham and gently spread a thin layer of cream cheese mixture on the
ham. Roll each topped ham piece into a tight roll.
6. With a very sharp knife, slice the rolls into 1"-1.5" long rolls. Wipe cream cheese off
the knife as needed for clean cuts.
7. Top each canape with one disc of sliced tomato and chive. Secure with decorative
toothpicks.

Baked Vegetables

Ingredients:
 1/4 head fresh broccoli, cut into florets
 1 carrot, cut into 1-inch pieces
 1 zucchini, thickly sliced
 1/2 potato, peeled and cubed
 Salt, to taste
 1 tablespoon olive oil
 1/4 of a (1 ounce) package dry onion soup mix

Procedures:

1. Preheat the oven to 400 degrees F (200 degrees C). Lightly oil a large, shallow
baking dish.
2. Combine broccoli, carrots, zucchini, and potatoes in the prepared baking dish and
lightly salt. Brush with olive oil and sprinkle with dry soup mix.
3. Bake in the preheated oven until vegetables are tender and easily pierced with a
fork, 30 to 45 minutes.

Bread Omelette (Sandwich)

Ingredients:

 2 slices brown bread


 1 large egg (or 2 small eggs)
 1.5 teaspoons oil
 1 green chili, finely chopped
 1 tablespoon onion, finely chopped
 1 tablespoon capsicum, finely chopped
 Salt, to taste
 Pepper, to taste
 Sandwich spread or ketchup
 Grated cheese or 1 cheese slice

Procedure:

1. Whisk the egg in a bowl till the mix turns frothy.


2. Add the veggies, green chillies, followed by the desired seasoning, and mix well.
3. Add your oil to a flat cooking pan, and let it heat.
4. Drop the egg mixture onto the heated pan, spread it uniformly and let it cook for 2
minutes on medium flame. Flip the omelette once the sides start browning and the
surface looks half cooked. Lift the omelette up from the flat pan.
5. Place one slice of bread on the same pan to toast it. Meanwhile, place the omelette
on top of the bread and fold it in a square shape. You may alternatively first place the
cheese slice/grated cheese in the middle before folding it in. Allow the cheese to melt.
6. Place the other bread slice on top and then flip it so that the other bread slice gets
toasted.
7. Once the surface crisps up, take it off heat.
8. Slice the sandwich into half and serve warm.

Arroz Caldo
(Soup)

Ingredients:

 1 tablespoon olive oil


 1/2 small onion, diced
 1 clove garlic, crushed
 1-inch piece fresh ginger, peeled and thinly sliced
 5-6 chicken wings, split and tips discarded (about 1
pound)
 1/2 tablespoon fish sauce (Optional)
 1 cup chicken broth
 1/4 cup glutinous sweet rice
 Salt and pepper, to taste
 1 green onion, chopped
 1/4 lemon, sliced (Optional)
 A few drops of fish sauce for sprinkling, if desired
(Optional)

Procedures:

1. Heat oil in a large pot over medium heat. Cook and stir onion, garlic, and ginger in
hot oil until fragrant, about 5 minutes. Add chicken wings; cook and stir for 1 minute. Stir
in fish sauce, cover, and cook another 2 minutes.

2. Pour chicken broth into the pot. Stir in sweet rice and bring mixture to a boil. Cover
and cook for 10 minutes, stirring occasionally to prevent rice from sticking to the bottom
of the pot. Season with salt and pepper.

3. Portion soup into bowls and garnish with green onion. Serve with lemon slices and
additional fish sauce, if desired.

Brownies
(Dessert)

Ingredients:
• 2 cups white sugar
• 1 ½ cups all-purpose flour
• 1 cup butter, melted
• 4 eggs
• ½ cup cocoa powder
• 1 teaspoon vanilla extract
• ½ teaspoon baking powder
• ½ teaspoon salt
• ½ cup walnut halves

Procedures:
1. Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13-inch pan.
2. Mix sugar, flour, melted butter, eggs, cocoa powder, vanilla, baking powder, and salt
in a large bowl until combined. Spread the batter into the prepared pan. Decorate
with walnut halves.
3. Bake in the preheated oven until top is dry and edges have started to pull away from
the sides of the pan, about 20 to 30 minutes; cool before slicing into squares.
