Kids' Recipe Book

As part of a school project, I created a recipe book for children with limited English language use. It's aimed at children aged 8 to 11. Spaghetti Bolognese
1. Egg fried rice

Lightly PAINT dough with topping oil and LEAVE for 5 minutes more. 7. SMEAR dough with tomato puree until coated. 8. SPRINKLE with pineapple, mushrooms, chicken and sweet-corn. 9. COVER with grated cheese and BAKE for 15 to 20 minutes.

Chicken cheesy bread


You will need: 500g bread dough 250g smoked chicken 80g shredded cheddar cheese 2 large tbsp mayonnaise 1 beaten egg 1 tablespoon grated parmesan cheese 1. PREHEAT oven to 170 C. FLOUR a surface and ROLL out the bread dough with a rolling pin. 2. SPREAD the dough with mayonnaise. Thinly SLICE the chicken and TOP the dough with it. 3. ADD cheddar cheese to the chicken. 4. DAB the dough edges with a little water. FOLD 1/3 of the dough over, then the other 1/3, at the long ends of the dough. PINCH together. 5. PLACE on a greased baking tray, seam side down. PAINT the top with egg and SPRINKLE with parmesan. BAKE for 35 to 40 minutes or until golden brown.

Omelette wedges
1. SLICE the potatoes and BOIL in a pan for 10 minutes. CHOP the spring onions. 2. CUT up the chicken. HEAT a frying pan with a little oil and STIR-FRY the chicken for 1 minute. TIP in the onions and STIR-FRY a little more. Set aside. 3. CRACK the eggs into a bowl and BEAT with the mustard, salt and pepper. 4. GRATE the cheese. ADD half to the eggs, and ADD the spring onions, chicken and potatoes. STIR everything. 5. HEAT the oil in a pan until hot. POUR in the mixture and STIR a little. 6. PREHEAT the grill. LOWER the heat and COOK the omelette for about 6 minutes. CUT the tomatoes into wedges and SPRINKLE the leftover grated cheese. 7. When the omelette slides around easily on the pan, but is still eggy on top, SLIDE it under the grill until the last of the egg mixture is cooked. COOL and SLICE into wedges.

If you like a creamier version, you can make the toast using mayonnaise or butter instead of cream cheese. Tip! You can also grill or microwave the toast, if you like.

You will need: - 300g pre-cooked rice noodles - 100g carrots - 100g spring onions - 100g beansprouts - 100g red peppers

Spring rolls
1. PREHEAT oven to 210C. 2. SLICE the carrots, spring onions, beansprouts, red peppers, and chicken. HALVE the prawns. 3. MIX together all the above ingredients. ADD garlic and ginger, and a little bit of soy sauce. 4. LAY OUT filo pastry sheets. 5. SPOON the filling down one side of the pastry. PAINT egg down the other side and ROLL the pastry up, starting at side with filling. 6. REPEAT with remaining filling and pastry. 7. PAINT the spring rolls with beaten egg and place on a baking tray. 8. BAKE for 20 25 minutes. 9. Serve with soy or sweet chilli sauce.

Creamy linguine
You will need: - 400g linguine - 100g sausages - 1 tablespoon olive oil - Juice of 1 lemon - 2 egg yolks - 3 tablespoons unsweetened yoghurt - Handful basil leaves 1. BOIL the linguine for about 10 minutes, or until cooked. 2. SLICE the sausages and FRY in the olive oil until browned and cooked through. 3. DRAIN the pasta and RETURN to the pan. 4. MIX in the fried sausages. 5. In a separate bowl, MIX together lemon juice, egg yolks, yoghurt and basil leaves. ADD to the pasta. 6. BLEND together. Serve with parmesan cheese.

Chocolate chip cookies


You will need: - 350g flour - 225g butter - 175g white caster sugar - 175g brown or palm sugar - 2 eggs - 350g dark chocolate - 1 teaspoon vanilla essence - 1 teaspoon salt - 1 teaspoon baking powder
1. CUT the chocolate into small pieces. 2. PREHEAT the oven to 190C. GREASE a large baking pan with 3. Strawberry jelly
You will need: 1 pack jelly mix 450ml strawberry or apple juice 18 ripe strawberries Whipped cream, to decorate 1. BOIL 6 teaspoons water and sprinkle onto the jelly mix. WHISK until it dissolves. 2. POUR in the juice and WHISK until evenly mixed. 3. HALVE the strawberries and PULL the green ends out. 4. PUT some pieces of strawberry into 6 glasses, leaving a few. 5. POUR the jelly juice into the glasses. PLACE in the fridge for 4 hours or until it has set. 6. DECORATE with whipped cream and additional strawberries.

1. RUB margarine or butter along the inside of a cake tin until it is greasy. HEAT the oven to 200C. 2. MIX together sugar and margarine until fluffy and white in colour. Use a beater or an electric hand whisk for this. 3. CRACK eggs into the margarine and MIX. STIR in the milk and vanilla until the mixture is creamy. 4. ADD flour, cocoa powder, and baking powder until it is evenly mixed in. 5. POUR into baking tray and BAKE for 20 30 minutes.
