India is a country of different cultures and traditions. Every culture has its special cuisine which is very popular
among people. One such place that offers us its tasteful blend of pahari cuisine is Himachal Pradesh. Here are
some amazing dishes that you must definitely try on your next visit:

1. Tudkiya Bhath
Tudkiya Bhaath is a pahadi pulao .It is a rice dish prepared with potatoes, ginger, garlic , onions, lentils and
yoghurt. Cardamom, cinnamon, bay leaf and other spices are added to it that makes this dish very tasty and spicy.

2. Bhey
Bhey is a popular, unique dish, which is made from the stems of the lotus flower. The stems are first thinly sliced
and washed. It is then boiled and stir-fried with garlic, onions, ginger- garlic paste, and gram flour which adds a
crunchy texture to the dish.

3. Chha Gosht
This is a non-vegetarian delight, which is loved by all. The lamb is marinated and cooked in a gravy of gram flour
and yoghurt along with the addition of Indian spices. It is best served with rice.
4. Dham
Dham is an integral part of the Himachali cuisine, and is served on every joyful occasion in the family. It was earlier
a temple feast reserved for royalty but it began to be prepared during special occasions for commoners too, thus
bringing the whole community together. As per legends, 1300 years ago the then king of Himachal Pradesh,
Jaistambh, was so impressed by Kashmiri wazwan that he ordered his cooks to prepare a similar feast back home
but without the use of meat. Thus this new cuisine was born in Himachal Pradesh.

5. Kullu Trout

This is a speciality from the region of Kullu, Himachal Pradesh. The trout is marinated and shallow fried in mustard
oil with minimal spices. This helps out bring the original taste of the fish.

6. Mittha
Mittha is a popular sweetened rice dessert, which is mixed with dry fruits and raisins.
7. Sidu
Sidu is a type of local bread prepared from wheat flour. The flour is kneaded and set aside for some hours. The
resting of the bread allows the yeast to settle, as the dough rises. This dough is put on direct flame and later
steamed. The bread is supposed to be served with ghee or dal as well.

8. Babru
This is a pahadi variation of the very popular kachori. It is stuffed with black gram filling which is first made into a
paste and then stuffed into the dough. These are then rolled with a rolling pin, and deep fried in oil. It is best
served with tamarind chutney.

9. Patande
Patande can be rightly called as Indian pancakes. It has been derived from the Sirmaur district of the state of
Himachal Pradesh. It is prepared with a batter made up of wheat flour, sugar and milk.
10. Chana Madra
Madra is one of the most widely-renowned dishes in the hills . It is prepared with chickpea flour and yoghurt.
Kabuli chana or white chickpeas is cooked in a curry with a bundle of pahadi flavours, onions, garlic and ginger.

11. Auriya Kaddoo
Auriya Kaddoo is a tangy pahadi dish, made with potatoes and pumpkin cooked in madra gravy and dried mango
powder which gives it the essential tanginess.

12. Mash Dal
Mash dal or kali dal is a Himachali specialty prepared with black lentils. The lentils must be soaked overnight and
then steamed in a pressure cooker. The onions are shallow fried in a pan along with garlic, spices and ginger, to
which the steamed lentils are added.

13. Akotri
Akotri is known to be a delicacy from the hills of Northern India. It is a type of cake which is made from buckwheat
mixed with wheat. It is specially prepared for occasions and festivals.

14. Aloo Palda
This is another dish, which resembles the Indian love for potatoes. The chunks of potatoes are cooked in a curd,
cardamom and a hint of mustard oil gravy.

15. Khatta Jimikand
Jimikand is known to be the Indian Yam, popular in Himachal Pradesh. It is more typically found in pahadi region
where there is a good produce of yam. The dish is tangy and a delicious delight of Himachal Pradesh.
